Cooking Instructions

Step 1

Begin by carefully slicing the chocolate cake sheet into three thin layers. If you don’t have a chocolate cake sheet, a soft sponge cake (castella) can also be a wonderful substitute. This forms the ‘walls’ of your fairy tale house.

Step 2

Using a square mousse ring will help shape the cake beautifully (this step can be skipped if you don’t have one). Place the first cake layer inside the ring and brush it generously with syrup to moisten it. Next, spread a layer of firmly whipped cream evenly over the syrup. Place another cake layer on top, brush it with syrup, and add more cream. Repeat this process for the final cake layer. (Layer order: Syrup -> Cream -> Cake -> Syrup -> Cream -> Cake). Once assembled, freeze the cake for about 1 hour. This chilling process makes it much easier to slice and handle.

Step 3

Remove the chilled cake from the freezer and carefully trim off the edges to create a neat rectangular shape. This will serve as the base for your Hansel and Gretel house.

Step 4

Now, let’s create the roof shape. On the longer sides of the rectangular cake, carefully make diagonal cuts with your knife, angling it to create a slope. Imagine cutting from the ‘white line’ section of the knife towards the ‘purple line’ area to form a gable roof. This will give your cake the characteristic shape of a house roof.

Step 5

Generously apply cream to the wider surfaces of the two sloped sections you just created. Gently lift these two pieces and join them together, cream-side facing each other. They will stand up to form the main structure of your little house.

Step 6

Spread more cream all over the ‘roof’ area. Now it’s time for the fun part – decorating! Use your assorted cookies and chocolates to adorn the roof and walls. You can get creative by making candy windows, chocolate doors, or arranging cookies like roof tiles for an even more enchanting finish.
