Melt-in-Your-Mouth Delicious White Oyster Mushroom and Ham Rolls on Skewers
Today, I’ve made ham rolls using White Oyster Mushrooms from the unique 3-color mixed oyster mushroom set. The texture is surprisingly melt-in-your-mouth! These delicate rolls offer a unique culinary experience, perfect for a light appetizer or side dish.
Main Ingredients
- 60g White Oyster Mushrooms
- 7 slices of processed ham
- 2 eggs
- 1 Tbsp pancake mix (buchim garu)
- 1 Tbsp cooking oil
Seasoning Sauce Ingredients
- 1 tsp minced Cheongyang chili pepper
- 1 tsp minced red chili pepper
- 1 tsp chopped green onion
- 1 Tbsp soy sauce
- 1 Tbsp kelp broth
- 1 Tbsp vinegar
- 1 tsp anchovy sauce (chamchi aek)
- A pinch of sesame seeds
- 1 tsp minced Cheongyang chili pepper
- 1 tsp minced red chili pepper
- 1 tsp chopped green onion
- 1 Tbsp soy sauce
- 1 Tbsp kelp broth
- 1 Tbsp vinegar
- 1 tsp anchovy sauce (chamchi aek)
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, here are the 3-color mixed oyster mushrooms, boasting a beautiful variety of colors. Today, we will be using the White Oyster Mushrooms, known for their particularly soft texture.
Step 2
Gently rinse the White Oyster Mushrooms under running water. Then, carefully separate them into individual strands by hand. It’s important to preserve the natural texture of the mushrooms.
Step 3
Separate the processed ham slices and cut each slice in half. Place the halved ham slices in a colander and pour hot water over them to quickly blanch. This helps remove any unwanted odor and results in a cleaner taste. Pat the blanched ham dry with a paper towel, then cut each half in half again. (Each original slice will be cut into four pieces).
Step 4
Now, place a portion of the prepared White Oyster Mushrooms on top of each piece of ham. Starting from one end, tightly roll up the ham with the mushrooms inside, ensuring the mushrooms don’t slide out. Secure each rolled ham with a skewer or toothpick. You can place 2-3 rolls on each skewer.
Step 5
Lightly dust the bottom part of the ham rolls (the part that will be dipped in egg) with pancake mix. This helps the egg batter adhere better and holds the shape while cooking.
Step 6
Crack the 2 eggs into a bowl and whisk them thoroughly. For a smoother and finer egg batter, strain the whisked eggs through a fine-mesh sieve. This step ensures a smooth coating without any lumps.
Step 7
Heat 1 Tbsp of cooking oil in a pan over medium heat. Dip the pancake mix-dusted ham rolls into the strained egg batter, coating them evenly on all sides. Then, reduce the heat to medium-low and cook slowly until each side of the ham rolls is golden brown. Be mindful of the heat to prevent burning.
Step 8
Let’s make a delicious seasoning sauce! In a small bowl, combine 1 tsp minced Cheongyang chili pepper, 1 tsp minced red chili pepper, and 1 tsp chopped green onion. Add 1 Tbsp soy sauce, 1 Tbsp kelp broth, 1 Tbsp vinegar, and 1 tsp anchovy sauce. Mix well. Finally, sprinkle a pinch of sesame seeds for added nuttiness. You can adjust the amount of chili peppers to your preference.

Your melt-in-your-mouth White Oyster Mushroom and Ham Rolls on Skewers are now complete! Serve them with the flavorful seasoning sauce for a delightful meal. These rolls are a wonderful way to create an impressive dish with simple ingredients.
