  • Strong brewed Americano (or espresso), as needed
  • 1 tsp Mugwort powder (for dusting)

Fragrant Mugwort Tofu Cream
  • 1 pack Firm tofu (approx. 300g)
  • 1/2 paper cup Unsweetened plain yogurt (approx. 100g)
  • 1/2 Tbsp Fresh lemon juice
  • 1 Tbsp Honey or agave syrup (adjust to taste)
  • 2 Tbsp High-quality mugwort powder

Cooking Instructions

Step 1

First, it’s crucial to remove as much water from the tofu as possible. Bring a pot of water to a boil, add the whole block of tofu, and blanch for about 1 minute. Immediately transfer the blanched tofu to cold water to cool, then gently press out the water with your hands or wrap it in paper towels to absorb excess moisture. This step helps achieve a smooth texture for the tofu cream.

Step 2

Place the drained tofu in a blender or food processor. Add the plain yogurt for creaminess, lemon juice for a refreshing tang, and honey for sweetness. Blend until very smooth, achieving a cream-like consistency. Ensure it’s blended thoroughly for the best texture.

Step 3

To the smooth tofu cream, add the 2 tablespoons of fragrant mugwort powder. Mix again until well combined. For an even distribution of mugwort aroma without over-mixing, you can use a low speed setting on your blender or pulse it briefly a few times. Adjust the amount of mugwort powder to your preference for a stronger or milder flavor.

Step 4

Now, let’s prepare the ‘bread’ layer of our tiramisu. Place one slice of whole wheat bread at the bottom of your serving dish or desired container. Soak the bread thoroughly by pouring the strong brewed Americano or espresso over it. Be careful not to make it too soggy, just enough to be moist and absorb the coffee’s flavor. The slightly bitter coffee aroma will infuse into the bread.

Step 5

Generously spread the prepared mugwort tofu cream over the coffee-soaked bread. You can layer it like a traditional tiramisu or spread it evenly across the slice.
