Main Ingredients
- 300g Sliced Beef (for bulgogi, brisket can be substituted)
- 1 bag Bean Sprouts (approx. 200g)
- 10 cloves Garlic
- 1/2 Carrot
- 1/2 Onion
- 1/2 stalk Green Onion
- Asparagus (optional, frozen can be used)
- Olive oil (or cooking oil) as needed
Cooking Instructions
Step 1
First, wash all vegetables thoroughly and cut them into bite-sized pieces. Julienne the carrot and onion, and slice the green onion diagonally. If you have asparagus, preparing it will add a more abundant texture. Also, cut the bulgogi beef into pieces that are easy to eat.
Step 2
Prepare the garlic by thinly slicing or mincing it. Heat a generous amount of olive oil in a frying pan over medium-low heat. Add the sliced garlic and slowly stir-fry to create garlic-infused oil. Once the garlic is golden brown, temporarily set it aside in a separate bowl. This process will infuse the dish with a rich garlic aroma, enhancing its flavor.
Step 3
In the same frying pan, add the prepared bulgogi beef. Sprinkle with a pinch of salt and black pepper. (If using brisket, which is fattier, you can skip this seasoning). Stir-fry the beef quickly over high heat to prevent it from clumping. Beef with less fat, like brisket, can become tough if overcooked, so it’s important to move to the next step when it’s about halfway cooked.
Step 4
Once the beef is about halfway cooked, add all the pre-cut vegetables to the pan: carrot, onion, green onion, and (if using) asparagus. Stir-fry them together. It’s best to stir-fry quickly over high heat to maintain the vegetables’ crisp texture.
Step 5
When the vegetables start to soften slightly, add the washed and drained bean sprouts to the pan. Bean sprouts release a lot of water if overcooked, so stir-fry them quickly with the vegetables to keep them crisp.
Step 6
Now it’s time to season. Drizzle 4 tablespoons of oyster sauce into the pan and add back the reserved fried garlic. Stir-fry everything evenly and quickly until the oyster sauce coats all the ingredients and the dish becomes glossy. This indicates it’s ready.
Step 7
Your delicious Beef Brisket and Bean Sprout Stir-fry is complete! It’s best enjoyed while warm. You can sprinkle some toasted sesame seeds on top, or add a bit of chopped chili pepper if you prefer it spicier. Enjoy this wonderful dish as a makgeolli accompaniment or a satisfying side dish! ♥
