First, prepare the cheesy fish cake. Slice the fish cake into uniform pieces about 0.7-1cm thick. Slicing them too thinly can cause them to break apart during cooking, so maintaining a good thickness is key. Lightly dusting the sliced fish cake with flour before dipping in egg will help the egg batter adhere better, preventing it from peeling off during frying.

Now, let’s make the egg batter. Crack 3 eggs into a bowl. Add a pinch of salt to season. Whisk the eggs gently until smooth. For a smoother and finer omelet texture, you can strain the beaten eggs through a sieve to remove the chalazae (the white, stringy bits).

Dip the prepared fish cake slices into the egg batter and pan-fry them on both sides until golden brown. It’s best to cook over medium-low heat rather than high heat to prevent burning and ensure they cook through. Set the fried fish cakes aside on a plate. Now, let’s make the rolled omelet.
