This year, sea snails are surprisingly affordable, so I happily bought 5kg! I’m a big fan of seafood, especially sea snails. When they’re this cheap, it’s the perfect time to stock up and enjoy them until you’re full for the next few years! It took me about three to four hours to clean, boil, and slice them, but the effort was well worth it once I tasted this delicious Sea Snail Jang. The hardest part was waiting for it to marinate, but the moment I took the first bite, it was a revelation! The chewy texture and delicate sea snail aroma make this a truly special dish. Main Ingredients
- Boiled Sea Snails 250g
Savory and Sweet Marinating Sauce
- Water 1.5 cups (approx. 300ml)
- Soy Sauce 1 Tbsp
- Salt (adjust to taste) 1 tsp
- Sugar (adjust to taste) 3 tsp
- Cooking Wine (Mirin or Sake) 1 Tbsp

Cooking Instructions
Step 1
First, thoroughly wash the fresh sea snails under running water. Place them in a pot, cover with water, and boil for about 15-20 minutes until cooked. Once done, remove them from the pot and let them cool down slightly.
Step 2
When the boiled sea snails are cool enough to handle, use a skewer or chopsticks to extract the meat from the shell, removing any internal organs and the hard operculum (the small, disc-like piece). This preparation ensures you enjoy the pure flavor of the sea snail.
Step 3
Slice the prepared sea snail meat into bite-sized pieces, about 0.5cm thick. Slicing them too thinly might reduce the chewy texture, so aim for a moderate thickness.
Step 4
Prepare a clean glass jar for marinating the sea snails. Arrange the sliced sea snail meat nicely inside the jar. It’s best not to pack the jar too tightly; leave a little space.
Step 5
Now, let’s make the delicious marinating sauce! In a wok or pot, combine 1.5 cups of water, 1 Tbsp of soy sauce, 1 tsp of salt, 3 tsp of sugar, and 1 Tbsp of cooking wine. Stir well to combine.
Step 6
Heat the prepared sauce over medium heat until it boils. As soon as it starts boiling, turn off the heat immediately. Either leave it in the pot or transfer it to another container and let it cool down completely. Pouring hot sauce directly onto the sea snails will cook them.
Step 7
Pour the completely cooled sauce over the sea snails in the glass jar. Ensure the sauce fully covers the sea snail pieces so that the flavor marinates evenly, resulting in delicious Sea Snail Jang.
Step 8
Seal the jar and refrigerate for 3 days to marinate. After 3 days, carefully pour out the sauce into a separate container and bring it to a boil again. Let it cool completely, then pour it back into the jar with the sea snails. This step deepens the flavor and enhances the savory notes.
Step 9
Once the sauce is poured back, seal the jar tightly and store it in the refrigerator to continue marinating. Marinating for at least another 3 days to a week will allow the flavors to fully meld, creating an even more delicious Sea Snail Jang. It’s perfect as a side dish for rice or as a snack with drinks!
