Main Ingredients
  • Beef tenderloin 250g
  • Bocconcini mozzarella 10 pieces
  • Cherry tomatoes 6 pieces
  • Shine Muscat grapes 6 pieces
  • Baby greens 70g
  • Salt to taste
  • Pepper to taste
  • Olive oil 1 Tbsp

Dressing Ingredients
  • Olive oil 3 Tbsp
  • Red onion 20g (finely minced)
  • Lemon juice 0.5 Tbsp
  • Honey 0.5 Tbsp
  • Balsamic vinegar 1 Tbsp
  • Salt 1g
  • Pepper to taste

Cooking Instructions

Step 1

First, pat the beef tenderloin dry with paper towels. Then, season generously with salt, pepper, and olive oil. Let it marinate for a moment to allow the olive oil to penetrate the meat.

Step 2

Heat a pan over medium-high heat. Place the seasoned tenderloin in the hot pan and sear for about 1-2 minutes per side until golden brown. The key is to get a nice crust while keeping the inside tender and juicy.

Step 3

Once seared, remove the tenderloin from the pan and let it rest on a plate for 5-10 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring a more tender and flavorful steak.

Step 4

Finely mince the red onion for the dressing. If you prefer some texture, you can chop it slightly coarser.

In a small bowl, combine all the dressing ingredients: 3 Tbsp olive oil, 20g minced red onion, 0.5 Tbsp lemon juice, 0.5 Tbsp honey, 1 Tbsp balsamic vinegar, 1g salt, and a pinch of pepper. Whisk together with a whisk or fork until well combined to create a delicious balsamic dressing.

Step 6

Arrange the baby greens on a large plate in a circular wreath shape. Artfully place the cherry tomatoes and Shine Muscat grapes in between the greens to complete the festive wreath presentation.

Step 7

Slice the rested beef tenderloin into bite-sized pieces, about 1 to 1.5 cm thick. For maximum tenderness, make sure to slice against the grain of the meat.

Step 8

Place the sliced beef tenderloin in the center of the prepared wreath salad. A beautiful arrangement of the salad and steak is key to the presentation.

Step 9

Just before serving, drizzle the balsamic dressing evenly over the salad and the steak. It’s best to dress right before eating to prevent the greens from wilting.
