Main Ingredients
  • 1 large bowl of well-fermented kimchi
  • 2 Tbsp kimchi brine (for extra flavor!)
  • 1/2 Tbsp minced garlic
  • A small amount of green onion, finely chopped
  • A pinch of black pepper
  • 1 tsp salted fermented shrimp (for a smooth taste)
  • 1 Tbsp soy sauce for soup (adds depth)
  • 2 pieces of dried kelp (about 5cm long)
  • 1 handful of dried anchovies for broth (guts removed)
  • 2 Korean chili peppers, thinly sliced (for a spicy kick)

Cooking Instructions

Step 1

First, let’s prepare the flavorful broth for our kimchi soup. In a pot, combine water with the dried anchovies (with guts removed) and the pieces of dried kelp. Bring to a simmer over medium heat and cook for about 10 minutes, allowing the savory flavors of the anchovies and kelp to infuse the water.

Step 2

Once the broth has developed its flavor, carefully remove the anchovies and kelp. (Be cautious not to overcook the kelp, as it can become slimy!) Add 1 tablespoon of soy sauce for soup to this clear broth to season it. You can also adjust the saltiness with additional salt, if desired.

Step 3

Add the large bowl of kimchi to the prepared broth and bring it to a boil. Once the kimchi has softened, stir in the 2 tablespoons of kimchi brine, 1/2 tablespoon of minced garlic, and 1 teaspoon of salted fermented shrimp. Mix well. Next, add the finely chopped green onion and the sliced Korean chili peppers (if you enjoy a spicier taste). Let it simmer for a few more minutes. Finally, a pinch of black pepper finishes off this delightful kimchi soup!

Step 4
