Main Ingredients
  • 1 pack of soft tofu (for stew)
  • 200g fresh clams
  • 60g zucchini (about 1/4 small)
  • 2/3 stalk green onion
  • 1 green chili pepper
  • 1 red chili pepper

Seasoning & Broth
  • 1 tsp minced garlic
  • 1 tsp salted shrimp (or a pinch of salt)

Cooking Instructions

Step 1

First, ensure the clams are properly purged of sand. Soak them in lightly salted water in a dark place for at least an hour; this helps them expel any grit. Once purged, place the clams in a pot with just enough water to cover them, and boil until they open. Strain the resulting clam broth through a fine-mesh sieve or cheesecloth to create a clear stock. Rinse the boiled clam meat gently in fresh water to remove any residual sand.

Step 2

Carefully open the package of soft tofu and pour it into a bowl. The stew-style soft tofu is not too firm, making it ideal for a delicate clear soup. (Note: Pre-packaged silken tofu commonly found in supermarkets may have a different texture; using tofu specifically labeled for stews is recommended.)

Step 3

Slice the zucchini into 0.5cm thick half-moons or small cubes. Remove the seeds from the green and red chili peppers and slice them thinly into rounds. Chop the green onion diagonally. Mince the garlic.

Step 4

Pour the strained clear clam broth into a pot and bring it to a simmer over medium heat. Once the broth is boiling, gently add the soft tofu in large chunks. After the tofu has cooked slightly, add all the prepared clam meat.

Step 5

Add the zucchini and minced garlic, and let it simmer further. Season the soup with salted shrimp to achieve a mild flavor. If salted shrimp is unavailable, you can adjust the seasoning with soy sauce or salt according to your preference. Finally, add the sliced chili peppers and green onion, and bring the soup to a quick boil. Your delicious clam and soft tofu clear soup is ready to be enjoyed hot!
