Main Ingredients
  • 1/2 block firm tofu
  • 1/2 bowl cooked rice (leftover rice is fine)
  • 500ml broth (anchovy-kelp, vegetable, or plain water)
  • 3 Tbsp rolled oats

Seasoning
  • 1 Tbsp anchovy sauce (soy sauce or regular soy sauce can be substituted)

Cooking Instructions

Step 1

Before you begin cooking, gather all your ingredients. The rolled oats are a great addition to thicken the porridge and add a satisfying texture and nutritional boost. If you don’t have broth, plain water works too, but using anchovy-kelp or vegetable broth will add a richer depth of flavor.

Step 2

It’s important to remove excess water from the tofu. You can press it gently with paper towels or wrap it in a cheesecloth for a few minutes to drain. This step prevents the tofu from becoming mushy when cooked and results in a much better porridge texture.

Step 3

Once the tofu is drained, mash it well. Heat a pot over medium-low heat, add the mashed tofu, and stir frequently. Cook until most of the moisture has evaporated and the tofu looks crumbly and dry. This process helps to eliminate any raw tofu taste and brings out its natural nutty flavor.

Step 4

When the tofu is sufficiently dry, pour in the prepared broth (or water) and bring it to a boil over medium-high heat. Once boiling, reduce the heat to medium-low.

Step 5

Add the cooked rice to the pot and break up any clumps with your spoon, stirring it into the broth.

Step 6

As the porridge begins to simmer and the rice softens, stir in the rolled oats. Whisk continuously to prevent lumps and cook for about 2-3 minutes, or until the oats have softened and the porridge has thickened slightly.

Step 7

Finally, season the porridge with 1 tablespoon of anchovy sauce. If you don’t have anchovy sauce, feel free to use Korean soup soy sauce or regular soy sauce. Taste and adjust the seasoning as needed to suit your preference.

Step 8

Stir well and simmer for another 1-2 minutes to allow the flavors to meld. Your delicious, creamy, and nutty tofu porridge is now ready! Serve warm and enjoy this comforting meal.
