Rain is forecast for the upcoming long holiday weekend. How about making some crispy bacon and chives pancakes at home, enjoying them with a cold beer while watching a movie? This is a very simple and quick pancake recipe.
Pancake Ingredients
- 200g fresh chives
- 1/4 onion
- 4 strips bacon
- 1 chili pepper (like Cheongyang pepper for mild heat)
- Plenty of cooking oil (for frying)
Crispy Batter
- 200ml water
- 1 packet anchovy broth pack (or kelp broth)
- 200ml pancake mix (Korean flour for frying)
Soy Sauce Dipping Sauce
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 2 Tbsp cooking wine (mirin or similar)
- 0.5 Tbsp red pepper flakes (gochugaru)
- 200ml water
- 1 packet anchovy broth pack (or kelp broth)
- 200ml pancake mix (Korean flour for frying)
Soy Sauce Dipping Sauce
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 2 Tbsp cooking wine (mirin or similar)
- 0.5 Tbsp red pepper flakes (gochugaru)
Cooking Instructions
Step 1
First, pour 200ml of water into a bowl. Add 1 packet of anchovy broth and let it steep for about 10 minutes to create a flavorful broth. This broth will enhance the overall taste of your pancake.
Step 2
While the broth is steeping, prepare the ingredients for the pancake. Cut the bacon into bite-sized pieces (about 1cm wide). Thinly slice the chives and the onion to a similar length as the bacon. Finely mince the chili pepper.
Step 3
Once the broth has a rich flavor, remove the broth pack. Then, add 200ml of the pancake mix to the broth and whisk it well until there are no lumps.

Mix the batter thoroughly with a whisk or spoon. Aim for a slightly thin batter consistency; this will help you spread it thinly on the pan, leading to a crispier pancake.

Now, add all the prepared ingredients to the batter: the sliced chives, onion, bacon, and minced chili pepper.

Gently stir the mixture with a spoon to ensure the ingredients are evenly coated with the batter. Make sure everything is well combined.

Heat a generous amount of cooking oil in a frying pan over medium-high heat. Once the oil is hot, ladle a portion of the batter onto the pan and spread it thinly into a round shape. Spreading it thinly is key to achieving a crispy texture.
Step 8
When the bottom of the pancake turns golden brown and crispy, gently shake the pan. If the pancake moves freely, it’s time to flip it. Check the doneness before flipping.
Step 9
Flip the pancake using a spatula and cook the other side until it’s also golden brown and crispy. The bacon will render its fat, adding a delicious savory flavor.
Step 10
Cut the well-cooked bacon and chives pancake into serving pieces and plate it. For an extra treat, mix 2 Tbsp soy sauce, 1 Tbsp vinegar, 2 Tbsp cooking wine, and 0.5 Tbsp red pepper flakes to create a dipping sauce. The combination of crispy pancake and the tangy, savory sauce is delightful!
