Main Ingredients
- Noodles for 2 servings
- 1 piece of prepared bamboo shoots (approx. 200-300g)

- 1 Korean chili pepper (cheongyang)
- 1/2 red chili pepper
- A small amount of cucumber
Seasoning Sauce
- 1/2 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp fish sauce (or Korean soy sauce)
- 2 Tbsp vinegar
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds
- Salt (to adjust seasoning)
- 1/2 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp fish sauce (or Korean soy sauce)
- 2 Tbsp vinegar
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds
- Salt (to adjust seasoning)
Cooking Instructions
Step 1
Prepare one piece of fresh bamboo shoot (about 200-300g). This amount is sufficient for 2-3 servings of Bibim Guksu.
Step 2
Slice the bamboo shoots into bite-sized pieces and place them in a large mixing bowl. Thinly slicing will ensure a tender texture.

Prepare the vegetables for the Bibim Guksu. Thinly slice the red and yellow bell peppers (1/4 each) and the green bell pepper (1/2). Finely chop or thinly slice the Korean chili pepper (1) and red chili pepper (1/2) for a spicy kick. Thinly slice the cucumber as well.

Add all the seasoning sauce ingredients to the mixing bowl with the sliced bamboo shoots and vegetables, and get ready to mix. Add all the seasoning ingredients to the mixing bowl: 1/2 Tbsp minced garlic, 1 Tbsp gochujang, 1.5 Tbsp gochugaru, 1 Tbsp fish sauce, 2 Tbsp vinegar, 1 Tbsp sugar, and 1 Tbsp sesame oil. Finally, add a pinch of toasted sesame seeds and salt to adjust the flavor according to your preference.

Gently mix the ingredients with your hands until the sauce is evenly distributed. Be careful not to overmix, so the crispiness of the bamboo shoots and the freshness of the vegetables are preserved.
