Quesadilla Base Ingredients
- 1 Tortilla (flour or corn)
- 100g Chicken breast
- 2 Button mushrooms
- 1/4 Onion
- 1/4 Bell pepper (any color)
- Plenty of Mozzarella cheese (approx. 50g)
Chicken Marinade
- Pinch of black pepper
- Pinch of salt
- 1 tsp Mirin (rice wine)
Flavorful Sauce
- 2 Tbsp Tomato sauce (or salsa)

Cooking Instructions
Step 1
First, dice the chicken breast into small 1cm cubes. Place them in a bowl and season with a pinch of black pepper, salt, and 1 teaspoon of mirin (rice wine). Gently mix to marinate. Mirin helps to remove any gaminess from the chicken and tenderizes the meat.
Step 2
Heat a dry frying pan over medium heat. Lightly toast the tortilla on both sides for about 10-20 seconds per side. Be careful not to overcook, as it can become too stiff. Lightly toasting makes the quesadilla wonderfully crispy.
Step 3
While the chicken is marinating, heat another frying pan over medium heat. Add 1 tablespoon of olive oil and cook the marinated chicken breast until golden brown and cooked through. Stir occasionally to ensure even cooking.
Step 4
When the chicken is about 80% cooked, add the finely chopped onion and sauté together. Once the onion becomes translucent and starts to turn slightly brown, add 2 tablespoons of tomato sauce (or salsa) and stir well. Cook until the sauce thickens slightly and the flavors meld.
Step 5
Finally, add the thinly sliced button mushrooms and finely chopped bell pepper. Stir-fry quickly for about 1 minute to keep the vegetables crisp and fresh. Avoid overcooking to maintain their texture.
Step 6
Now it’s time to assemble the quesadilla! Place the toasted tortilla back on the pan over low heat. Sprinkle about half of the mozzarella cheese evenly over one half of the tortilla, leaving the edges clear. Then, generously spoon the cooked chicken filling onto the cheesy half.
Step 7
Sprinkle plenty of mozzarella cheese over the filling – more cheese means a more satisfying melt! Fold the other half of the tortilla over the filling to create a semi-circle. Cover the pan with a lid and cook over low heat for 2-3 minutes until the cheese is fully melted. Flip carefully and cook the other side until golden brown. Your delicious chicken quesadilla is ready to enjoy!
