I’ve transformed some leftover steamed potatoes, which were stored in the freezer, into a delicious and satisfying snack: Potato Tortillas! The combination of crispy tortilla, creamy mashed potato filling, sweet honey, and crunchy almonds is a winner for all ages. It’s a great way to use up steamed potatoes before they lose their best flavor.

Ingredients
  • 5 small steamed potatoes (thawed from frozen)
  • Corn kernels (frozen)
  • Pinch of salt
  • Pinch of black pepper
  • 1 Tbsp sugarcane sugar
  • 1 knob of butter
  • 2 tortillas
  • Honey
  • Sliced almonds
  • Mayonnaise (optional)

Cooking Instructions

Step 1

First, thaw the 5 steamed potatoes (that were stored in the freezer) completely in the microwave. Adjust the cooking time based on your microwave’s power.

Step 2

Once thawed, use a fork or a potato masher to mash the steamed potatoes until smooth. Aim for a lump-free consistency for the best texture.

Step 3

Prepare your frozen corn kernels. While canned corn is convenient, it can be quite sweet. For a healthier option, consider using steamed corn from a traditional market, then carefully remove the kernels with a specialized tool or a knife, and freeze them. Adding corn kernels provides a delightful chewy texture that elevates any dish by about 1.5 times!

Season the mashed potatoes with a pinch of salt and pepper. It’s important to enhance the natural potato flavor without making it too salty.

Add 1 tablespoon of sugarcane sugar to balance the flavors and add a touch of sweetness. You can also substitute with a little honey here if you prefer.

Combine the mashed potatoes and the prepared corn kernels in a bowl. Mix them thoroughly with a spatula or spoon, ensuring the corn kernels are evenly distributed.

Melt 1 knob of butter in a lightly greased pan over medium-low heat. Be careful not to burn the butter; keep the heat moderate.

Once the butter is melted, carefully place one tortilla into the pan.

Lightly brush the tortilla with honey. The honey acts as a binder, helping to keep the mashed potato filling in place and preventing it from spilling out.
