Crispy Tonkatsu Donburi (Super Easy Recipe)
Delicious Tonkatsu Donburi (Katsudon) Made with Frozen Tonkatsu
This is a super easy recipe for Tonkatsu Donburi, a satisfying meal made with just one piece of frozen tonkatsu. Enjoy delicious katsudon at home, just like from a restaurant! The combination of crispy tonkatsu, sweet and savory sauce, and tender egg is exceptional.
Main Ingredients
- 1 piece of frozen tonkatsu (your preferred size)
- 1 medium onion
- 1 bowl of warm rice
- A little chopped green onion (for garnish)
- Cooking oil (for frying tonkatsu)
- 2 eggs
Special Tonkatsu Donburi Sauce
- 3 Tbsp soy sauce
- 2 Tbsp mentsuyu (or extra soy sauce if unavailable)
- 1 Tbsp sugar
- A pinch of black pepper
- 200ml water

Cooking Instructions
Step 1
First, prepare the vegetables. Peel and wash the onion thoroughly, then slice it into about 0.5cm thick strips. Chop the green onions into bite-sized pieces for garnish. (Finely chopped white parts of green onions can also be used.)
Step 2
Let’s make the secret to delicious tonkatsu donburi – the sauce! In a small bowl, combine 3 Tbsp soy sauce, 2 Tbsp mentsuyu, 1 Tbsp sugar, a pinch of black pepper, and 200ml water. Stir well until the sugar dissolves. If you don’t have mentsuyu, you can use a little more soy sauce.
Step 3
In another small bowl, crack the 2 eggs and gently whisk them together. Don’t overbeat; just mix the yolks and whites until combined for a better texture when cooked.
Step 4
Now it’s time to fry the frozen tonkatsu until golden brown and crispy. Pour enough cooking oil into a frying pan or deep fryer to cover the tonkatsu and preheat it to 170-180°C (340-350°F). Carefully place the tonkatsu in the hot oil and fry for about 5-7 minutes, flipping occasionally, until it’s a golden brown color. (Frying directly from frozen ensures it cooks through.)
Step 5
Transfer the crispy fried tonkatsu to a paper towel-lined plate to drain any excess oil. Let it rest for 1-2 minutes before slicing; this helps prevent it from falling apart. Slice into bite-sized pieces, about 2-3cm wide.
Step 6
In a wide pan, add the sliced onion and sauté over medium heat until softened and translucent. Once the onion is cooked, pour in the prepared sauce and add the chopped green onions. Bring the sauce to a boil, then increase the heat to high and cook for another minute to let the onions absorb the sauce flavor.
Step 7
Once the sauce is boiling nicely, arrange the sliced tonkatsu evenly in the pan. Let the tonkatsu soak slightly in the sauce, then carefully pour the whisked eggs over the tonkatsu and into the spaces between them. Be careful not to overcook the eggs.
Step 8
When the edges of the egg are set but the center is still slightly runny (about 30 seconds to 1 minute), immediately open the lid and turn off the heat. The residual heat will gently cook the egg, resulting in a delicious soft-boiled texture.
Step 9
Serve the warm rice in a donburi bowl. Carefully place the cooked tonkatsu, sauce, and egg mixture on top. Finally, sprinkle the chopped green onions as a garnish. Your homemade Tonkatsu Donburi (Katsudon) is now complete! Enjoy your meal!
