Rice paper, once solely used for fresh spring rolls, is now a fantastic and easy alternative to batter for frying! Today, I’m excited to share another delicious recipe using rice paper.

Ingredients
  • 1 Zucchini
  • 10 sheets Rice paper

Cooking Instructions

Step 1

Trim the ends off the zucchini. Cut the zucchini in half lengthwise, and then slice it into approximately 1cm thick pieces. Aim for a consistent thickness for even cooking.

Step 2

Sprinkle the sliced zucchini evenly with salt and black pepper. This light seasoning will enhance the zucchini’s natural flavor and prepare it for cooking.

Step 3

Briefly dip each sheet of rice paper into cold water until it becomes pliable, but not too soft – you don’t want it to tear. Carefully wrap each seasoned zucchini slice with a softened rice paper sheet.

Step 4

Heat a generous amount of oil in a frying pan over medium heat. Place the rice paper-wrapped zucchini slices into the hot oil. Fry them until golden brown and crispy on both sides, turning occasionally. Adjust the heat as needed to prevent the rice paper from burning.

Step 5

Prepare a delicious dipping sauce. In a small bowl, combine 1 Tbsp peanut butter, 0.5 Tbsp mayonnaise, 0.5 Tbsp soy sauce, 1 Tbsp lemon juice, and 1 Tbsp allulose (or corn syrup). Mix well until smooth.

Step 6

Arrange the crispy zucchini fritters on a serving plate. Serve immediately with the prepared dipping sauce on the side. Enjoy the delightful crunch and savory flavor!
