Here’s a recipe for delicious peanut cookies perfect for satisfying those late-night cravings! Just like I felt last night, sometimes you just need a cookie. This recipe uses simple ingredients and is quick to assemble if you measure carefully. If you don’t have peanuts on hand, substituting with walnuts adds a wonderful texture and nutty flavor. These cookies are wonderfully crispy and pair perfectly with your favorite coffee or tea.

Cookie Dough Ingredients
  • 100g All-purpose flour (sifted for a softer texture)
  • 20g Walnuts (finely chopped)
  • 60g Sugar
  • 2g Baking powder
  • 120g Peanut butter (softened at room temperature)
  • 2 Tbsp Milk
  • 1 Egg (at room temperature)

Cooking Instructions

Step 1

Begin by placing the softened peanut butter in a bowl. Lightly cream it with a whisk or spatula. Gradually add the sugar in two or three additions, mixing well until combined. Then, pour in the lightly beaten egg in 2-3 parts, mixing until the mixture is smooth and creamy. It’s important to add the egg gradually to prevent the mixture from separating.

Step 2

Measure out your sifted all-purpose flour and baking powder. Sifting the flour twice will ensure a lighter, more tender cookie. Add the chopped walnuts and milk to the dry ingredients. Gently mix everything together using a spatula in a ‘cross’ pattern until just combined and no dry flour streaks remain. Be careful not to overmix, as this can make the cookies tough.

Step 3

Divide the dough into equal portions. I made 16 cookies, with some weighing 23g and others 20g. Flatten each portion slightly into a disc. Using the back of a fork, gently press down on the surface of each cookie to create a classic crosshatch pattern. This not only adds a decorative touch but also helps prevent the cookies from spreading too much while baking.

Step 4

Preheat your oven to 175°C (350°F). Arrange the shaped cookies on a baking sheet, leaving some space between them. Bake for approximately 12 minutes, or until lightly golden brown. Baking times may vary depending on your oven, so keep an eye on them. Once baked, transfer the cookies to a wire rack to cool. Enjoy their delightful crispiness once they have cooled completely.
