Main Ingredients
- 5-6 medium-sized potatoes
- 0.5 piece of pink sausage (or your preferred sausage)
- 0.5 to 1 onion
- 3 dried shiitake mushrooms (or 2 fresh shiitake mushrooms)
- A pinch of sesame seeds
Braised Potato Seasoning
- 2 Tbsp cooking oil
- 4 Tbsp soy sauce (not clear soy sauce)
- 1 Tbsp beef bouillon powder (or chicken stock)
- 0.7 Tbsp minced garlic (approx. 1/2 Tbsp)
- 1/2 Tbsp sugar
- 1.3 cups water (based on a standard paper cup of approx. 220ml)
- 2 Tbsp cooking oil
- 4 Tbsp soy sauce (not clear soy sauce)
- 1 Tbsp beef bouillon powder (or chicken stock)
- 0.7 Tbsp minced garlic (approx. 1/2 Tbsp)
- 1/2 Tbsp sugar
- 1.3 cups water (based on a standard paper cup of approx. 220ml)
Cooking Instructions
Step 1
First, wash and prepare the main ingredient: the potatoes. Medium-sized potatoes are best for braising. Peel them and cut them into pieces slightly larger than bite-sized; this helps them maintain their shape while cooking without falling apart.
Step 2
Place the prepared potatoes in a pot. Slice the onion thickly and add it to the pot. If using dried shiitake mushrooms, rehydrate them in lukewarm water until soft, then remove the tough stems and slice them into appropriate sizes. (If using fresh shiitake mushrooms, wash them thoroughly and slice.) Slice the pink sausage, adding a touch of nostalgic flavor, into easy-to-eat pieces. You can even use cookie cutters for a fun shape that kids will love!
Step 3
Now, let’s make the delicious seasoning for the braised potatoes. Using a standard Korean dining spoon (1 Tbsp), add 4 Tbsp of soy sauce, 1 Tbsp of beef bouillon powder for a savory depth, 0.7 Tbsp of minced garlic for aromatic flavor (about 1/2 Tbsp), and 1/2 Tbsp of sugar for a touch of sweetness. Drizzle in 2 Tbsp of cooking oil for richness. Finally, add about 1.3 cups of water (a little more than one standard paper cup) to ensure the seasoning coats the ingredients well.
Step 4
Gently stir everything in the pot with a spatula or spoon to ensure the ingredients and seasoning are well mixed. Evenly distributing the seasoning is key.
Step 5
Now, turn on the heat to very low (low heat) and cover the pot with a lid to braise slowly. Occasionally lift the lid to stir the potatoes gently, making sure they don’t stick to the bottom. To check if the potatoes are cooked, pierce them with a chopstick. If it goes in smoothly, they are ready. Continue braising until the sauce is slightly reduced and syrupy.
Step 6
Just before turning off the heat, when the potatoes are almost cooked and the sauce is thickening, drizzle about two swirls of oligosaccharide (rice syrup) over the top. This adds a beautiful glossy sheen and helps prevent the potatoes from breaking apart.
Step 7
Finally, sprinkle a pinch of sesame seeds on top for an added nutty aroma. Your delicious braised potatoes are now complete! Serve them warm over a bowl of rice and enjoy.
