Whip up this incredibly satisfying homemade potato sandwich, a beloved classic! Sandwich Components
- 6 slices of bread
- 250g potatoes (about 2 medium-sized)
- 2 hard-boiled eggs
- 6 slices of cheese
- 6 fresh lettuce leaves
- 1/2 cucumber
- 40g carrot (about 1/4 small carrot)
- 3 imitation crab sticks (kani or surimi)
Potato Salad Seasoning
- 3-4 Tbsp mayonnaise (adjust to taste)
- 1 tsp mustard sauce
- Pinch of black pepper
- Pinch of salt

Cooking Instructions
Step 1
Wash the potatoes thoroughly and steam them with their skins on for about 20-25 minutes, or until fork-tender. While still hot, peel them and mash them smoothly using a fork or a potato masher. Ensure there are no lumps for a creamy texture.
Step 2
Thinly slice the cucumber (about 0.5 cm thick) and remove the seeds. Sprinkle with a pinch of salt and let it sit for 15 minutes to draw out moisture. Squeeze out as much water as possible using a clean kitchen towel. This step prevents the sandwich from becoming soggy.
Step 3
Dice the carrot into small cubes, similar to the cucumber’s thickness. Lightly grease a pan and sauté the carrots over medium-low heat until slightly softened and their sweetness is released. (Tip: If you prefer a crispier texture, you can omit this step and use the carrot raw.)
Step 4
Peel and finely chop or mash the hard-boiled eggs. Shred or finely chop the imitation crab sticks.
Step 5
In a large bowl, combine the mashed potatoes, chopped eggs, crab sticks, squeezed cucumber, and sautéed carrots. Add the mayonnaise, mustard sauce, a pinch of black pepper, and a pinch of salt. Gently mix everything together until well combined. Taste and adjust seasoning if needed.

Spread a thin layer of your favorite jam (strawberry, grape, etc.) on one side of a slice of bread. Place a clean, dry lettuce leaf on top, followed by a slice of cheese.

Generously spread the potato salad mixture over the cheese, leveling the surface. Place another slice of cheese on top of the potato salad. Finally, spread a thin layer of mustard sauce on one side of the remaining bread slice and place it on top to complete the sandwich.
