This recipe is for incredibly easy cornbread (corn cake) that requires no fermentation! Simply mix all the ingredients, shape them, and bake. - Bread flour 200g
- Cornmeal 150g
- Salt 2g
- Sugar 80g
- Baking powder 15g
- Eggs 3
- Water 110g
- Unsalted butter 50g (softened at room temperature)
- Egg yolk 1 (for brushing)
- Canned corn kernels 100g (drained)
Cooking Instructions
Step 1
First, in a large bowl, combine the bread flour, cornmeal, salt, sugar, and baking powder. Add the 3 eggs, 110g of water, and 50g of softened unsalted butter. Mix with a spatula or your hands until no dry flour remains. Set aside the egg yolk for brushing the top later.
Step 2
Once the dough starts to come together, it’s natural for it to be slightly sticky to the touch. There’s no need to knead it extensively. Now, add the drained canned corn kernels (100g) and mix them thoroughly into the dough. The corn kernels add a wonderful texture and extra corn flavor.
Step 3
Divide the dough into portions of approximately 120g each. This recipe will yield about 4-5 pieces of cornbread. Using a kitchen scale will help ensure uniform sizes.
Step 4
Shape each portion of dough into a ball, then gently flatten it into a diamond shape. If you prefer a simpler approach, you can also just make them round. Feel free to shape them as you like.
Step 5
Using a knife, make a shallow cut in the center of each shaped dough piece. Then, brush the tops evenly with the reserved egg yolk and sprinkle with sugar. The egg yolk will give the cornbread a beautiful golden-brown color, and the sugar will add a touch of sweetness and a slight crispness.
Step 6
Bake in a preheated oven at 180°C (350°F) for about 17 minutes. Baking times may vary slightly depending on your oven. The cornbread is ready when the tops are a lovely golden brown and a toothpick inserted into the center comes out clean. Enjoy them warm for the best flavor!
