Basic Ingredients

  • 2 slices of ham, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1 pinch of dried parsley

Cooking Instructions

Step 1

First, it’s important to boil the eggs beautifully. Place the eggs in a pot and cover them with water. Add about 0.3 pinch of salt and 1 Tbsp of vinegar to the water. Bring to a boil over high heat. Once boiling, gently roll the eggs in the water occasionally; this is key to ensuring the yolk stays centered as it cooks, creating a visually appealing egg. This step really defines the final look of your stuffed eggs!

Step 2

Once the water comes to a rolling boil, reduce the heat to low and continue to simmer for another 10 minutes. Tip: Adding salt and vinegar to the boiling water helps prevent the eggshells from cracking. For best results, keep gently rolling the eggs during the cooking process.

Step 3

Immediately transfer the boiled eggs to an ice bath to cool down. This makes peeling much easier. Once completely cooled, carefully peel the shells. Then, using a sharp knife or even a piece of fishing line, slice each egg in half lengthwise. Be careful to separate the yolk from the white, as you’ll need them both for different parts of the recipe.

Step 4

While slicing the eggs in half, using fishing line can result in an even cleaner and neater cut. If using a knife, proceed with gentle, steady pressure. Today, I’ve used a tool similar to one used for slicing sponge cake, which is also a great method! Feel free to use whatever method works best for you to achieve a clean cut.

Step 5

To make your stuffed eggs stand upright easily, slightly flatten the rounded bottom of each egg white half. This creates a stable base, ensuring they sit nicely when presented. This little adjustment makes for a more polished final appearance.

Step 6

Now, let’s prepare the filling. Place the separated egg yolks in a bowl. Finely chop the ham and the red bell pepper. It’s important to chop the vegetables very finely so they can pass through a piping bag easily; overly large pieces can cause blockages. Chop 1/2 red bell pepper and 2 slices of ham. Add 1 pinch of dried parsley to this mixture and combine.

Step 7

In the bowl with the reserved egg yolks, add all the finely chopped vegetables and ham. Now, incorporate the filling ingredients: 2 Tbsp mayonnaise, 1 Tbsp mustard, 1/2 Tbsp sugar, a pinch of salt, and a pinch of black pepper. Mix everything thoroughly until well combined. Transfer this delicious mixture into a piping bag. If you don’t have a piping bag, a ziplock bag with a corner snipped off will work perfectly.

Step 8

Using the piping bag, generously fill the prepared egg white halves with the yolk mixture. Once filled, garnish with a sprinkle of dried parsley or some microgreens for an even more elegant and appetizing presentation. Your beautiful stuffed eggs are now ready!
