  • 1/4 head Cabbage (medium size)
  • 1/2 stalk Scallion (Green Onion)
  • 1 King Oyster Mushroom
  • A pinch of Sesame Seeds (for garnish)
  • A pinch of Parsley Flakes (for garnish)
  • 1 pinch Salt (for stir-frying cabbage)
  • 2 grinds Black Pepper (for stir-frying cabbage)

Special Stir-fry Sauce
  • 1 Tbsp Minced Garlic
  • 4 Tbsp Soy Sauce (Korean Jin Ganjang)
  • 4 Tbsp Cooking Wine (Mirin or similar)
  • 4 Tbsp Oligodang (Corn Syrup or similar)

Cooking Instructions

Step 1

First, wash the cabbage thoroughly under running water. Then, slice it thinly into shreds about 0.5 cm thick. Slicing it uniformly will ensure a consistent texture when cooked.

Step 2

Place the shredded cabbage in a bowl and rinse it under cold running water, gently agitating it with your hands. This step helps remove any bitterness or impurities from the cabbage, resulting in a cleaner taste. After rinsing, drain the cabbage well in a colander.

Cut the pork jowl into bite-sized pieces, about 2-3 cm long, for a pleasant chew. Slice the green onions and king oyster mushrooms to a similar length as the pork. This uniformity will make the stir-fry visually appealing and easy to eat.

Let’s make the delicious stir-fry sauce! In a small bowl, combine 1 tablespoon of minced garlic, 4 tablespoons of soy sauce, 4 tablespoons of cooking wine, and 4 tablespoons of oligodang. Whisk them together with a spoon until well combined. You can substitute sugar for oligodang if preferred.

Stir-fry for another 1-2 minutes until the sauce is well distributed and the cabbage is tender but not mushy. Be careful not to overcook, as it can release too much water. Transfer the stir-fried cabbage to a separate bowl for now.

Wipe the pan clean if necessary, then reheat it. Add the sliced pork jowl and cook until nicely browned. Over medium-high heat, flip the pieces regularly to ensure they cook through while retaining their juices. If there’s excessive fat, you can carefully dab it with a paper towel.

Once the pork jowl is slightly crispy, add the sliced king oyster mushrooms to the pan. Stir-fry them with the pork; the mushrooms will absorb the rendered pork fat, adding more flavor.
