Fluffy and Tender Steamed Egg (Gyeranjjim)
Easy Steamed Egg Recipe – Inspired by Chef Baek Jong-won
Since our main dish for dinner was Budae Jjigae, which our daughter couldn’t eat, I quickly whipped up some steamed eggs as a side dish for her. I followed Chef Baek Jong-won’s recipe! I adjusted the quantities to suit our family’s needs. This is a simple yet delicious dish that’s perfect for baby food or as a side.
Main Ingredients
- 3 large eggs
- A small amount of green onion, finely chopped
Seasoning & Others
- 1/2 cup water (approx. 100ml)
- 1 teaspoon salt
- A pinch of sugar (optional)

Cooking Instructions
Step 1
Crack 3 large eggs into a small earthenware pot (ttukbaegi, about 12-14 cm in diameter). Removing the chalazae (the white stringy bits) will result in an even smoother texture.
Step 2
Add 1/2 cup of cold water (about 100ml), 1 teaspoon of salt, and a small pinch of sugar (you can omit the sugar if you prefer less sweetness) to the eggs in the pot.
Step 3
Gently whisk the eggs with a chopstick or a whisk until well combined and no lumps remain. You don’t need to whisk vigorously; just a gentle ‘swish, swish’ motion is fine.
Step 4
Place the ttukbaegi over medium heat on the stove. Using a wooden spatula or spoon, gently stir the mixture, scraping the bottom and sides to prevent sticking. Continue stirring slowly as the eggs begin to form soft curds.
Step 5
When the eggs are about 80% cooked and have a soft, curdled consistency, reduce the heat to low. Cover the pot with a lid and do not stir anymore. (Tip: If you don’t have a lid for the pot, you can use a plate or another pot lid. It’s a shame I don’t have a photo of it covered!)
Step 6
Let it cook for another 3-4 minutes on low heat. When you lift the lid, the steamed egg will have puffed up beautifully, boasting a wonderful appearance! Sprinkle the finely chopped green onions evenly over the top of the cooked steamed egg. The fresh aroma of the green onions adds to the deliciousness!
Step 7
Finally, drizzle about 1 tablespoon of sesame oil over the top for a rich, nutty aroma. Your Chef Baek-inspired steamed egg is now ready! Enjoy it immediately while it’s warm for the most moist and tender experience.
