Golden Ratio Hamburger Sauce
Homemade Hamburger Sauce (Bulgogi Sauce Style)
I’m sharing this recipe with one goal in mind: to offer a little help to those starting their own culinary ventures. Though it may seem simple, this is a recipe I’ve personally developed and refined over more than a decade of working as a chef, so I share it with utmost confidence! I must preface this by explaining that I am not currently working in a professional kitchen, which means I cannot provide photos of the cooking process or the finished dish. The images used are sourced. Should any issues arise, I will promptly remove or modify this content. My intention here, as on this site, is to support aspiring restaurateurs, so please use this recipe as a helpful reference.
Sauce Ingredients
- 3 Tbsp Soy Sauce (Jin Ganjang)
- 3 Tbsp Sugar
- 1 Tbsp Mirin (Rice Wine)
- 1 tsp Sesame Oil
- 1 tsp Minced Garlic
- 60ml Water
- 1 Tbsp Starch (Corn or Potato Starch)
- 2 Tbsp Water (for starch slurry)
Cooking Instructions
Step 1
In a saucepan, combine the soy sauce, sugar, mirin, sesame oil, minced garlic, and 60ml of water. Whisk thoroughly with a whisk or spatula until the sugar is completely dissolved. Ensuring all ingredients are well combined is crucial for a smooth sauce base.
Step 2
Place the saucepan over medium heat and bring the mixture to a simmer. Once it begins to bubble, reduce the heat to low. Stir occasionally to prevent the sauce from scorching at the bottom.
Step 3
In a separate small bowl, mix 1 Tbsp of starch with 2 Tbsp of water to create a smooth slurry, ensuring there are no lumps. Gradually pour this starch slurry into the simmering sauce while stirring continuously. Continue stirring until the sauce reaches your desired thickness. It’s important to monitor the consistency and adjust as needed to avoid making it too thick.
Step 4
Once the sauce has reached the desired consistency, remove it from the heat. Transfer the sauce to a shallow dish or container to cool completely. The sauce will thicken further as it cools. Once cooled, store it in the refrigerator for a longer shelf life. This delicious sauce is perfect for topping burger patties or mixing into sandwich fillings!
