Cookie Dough Ingredients
- 150g low-gluten flour (cake flour)
- 4 Tbsp cornstarch
- 2 Tbsp cocoa powder
- 3 Tbsp milk powder (sweetened or unsweetened)
- 1 tsp baking powder
- 113g unsalted butter, softened at room temperature
- 4 egg yolks
- 1/2 tsp grapeseed oil (or vegetable oil)
- 60g sliced almonds
- 100g sugar
Cooking Instructions
Step 1
Start by creaming the softened butter in a bowl with a whisk until smooth. Gradually add the sugar in 2-3 additions, beating until light and fluffy, resembling a pale cream. Next, incorporate the egg yolks one at a time, ensuring each is fully mixed before adding the next to prevent separation. Finally, stir in the grapeseed oil until well combined. This forms the base for your cookie dough.
Step 2
In a separate bowl, sift together the low-gluten flour, cornstarch, cocoa powder, milk powder, and baking powder. Sift the dry ingredients at least 2-3 times. This ensures they are well aerated and evenly distributed, which contributes to a tender cookie texture.

Add the sifted dry ingredients to the butter mixture. Using a spatula, gently fold them together until just combined and no dry streaks remain. Once the dough starts to come together, transfer it to a sheet of plastic wrap. Roll it up tightly like a sushi roll to form a compact log. Place the dough log in the freezer for about 30 minutes to firm up. Chilling the dough makes it easier to slice without crumbling and helps maintain its shape.
Step 4
Remove the chilled dough log from the freezer and slice it into uniform rounds, about 0.5 cm (0.2 inches) thick. Gently press the sliced almonds onto the top surface of each cookie. Lightly press them in to ensure they adhere well during baking and look appealing.
