Main Ingredients
  • 5 cabbage leaves
  • 3 tomatoes
  • 1 cup tomato sauce (approx. 200ml)
  • 1 cup purified water (approx. 200ml)
  • Pinch of salt
  • Pinch of black pepper
  • 1 block firm tofu (approx. 300g)
  • 1/4 onion
  • 1/4 red bell pepper
  • 6 black olives

Cooking Instructions

Step 1

First, prepare 5 cabbage leaves by carefully separating the large outer leaves. Bring a pot of water to a boil, add a pinch of salt, and blanch the cabbage leaves for about 5 minutes until they become pliable. This makes them easier to roll.

Step 2

Next, make shallow cross-shaped cuts on the bottom of each of the 3 tomatoes. Dip them into boiling water for about 1-2 minutes to slightly blanch them. This step helps in easily peeling the skin.

Step 3

Immediately transfer the blanched tomatoes to cold water to cool them down. Once cooled, gently peel the skin off, starting from the cross-shaped cuts.

Step 4

Dice the peeled tomatoes into larger pieces. Finely mince the onion, red bell pepper, and black olives. Mincing the vegetables well will help them integrate nicely with the other filling ingredients for a pleasant texture.

Step 5

Prepare the tofu by draining its water content as thoroughly as possible using a cheesecloth or paper towels. Removing excess water from the tofu is crucial to prevent the filling from becoming too moist and to help the rolls hold their shape.

Step 6

In a large bowl, crumble the drained tofu. Add the minced onion, bell pepper, and black olives. Season with a pinch of salt and pepper. Gently mix and knead the ingredients with your hands until they form a cohesive filling mixture.

Step 7

Lay out a prepared cabbage leaf. Place a portion of the tofu filling in the center. Carefully fold the sides of the cabbage leaf inwards and then roll it up snugly, enclosing the filling. Repeat this process with the remaining cabbage leaves and filling to make all the rolls.

Step 8

In a wide pot, combine the tomato sauce, diced tomatoes, and purified water. Add a little more salt and pepper to taste, creating the sauce base.

Step 9

Arrange the prepared cabbage rolls neatly in the pot on top of the sauce. Cover the pot and simmer over medium-low heat for about 10 minutes, or until the rolls are cooked through and tender. Enjoy your healthy and delicious vegan cabbage rolls warm!
