Ingredients
  • Strawberry or Blueberry Juice 75g
  • Allulose 5g
  • Agar-Agar Powder 1/2 tsp

Cooking Instructions

Step 1

First, prepare about 150g of fresh strawberries. Be sure to remove the stems completely to avoid any bitterness in your jelly.

Step 2

Place the stemmed strawberries into a food processor or blender and process until they form a very smooth purée. Blending them finely will result in a smoother jelly texture.

Step 3

Strain the puréed strawberries through a fine-mesh sieve to extract the juice. Gently press with a spoon to help the juice drain through. Discard the pulp.

Step 4

Measure out exactly 75g of the strained strawberry juice. This specific amount will ensure the perfect consistency and flavor for your jelly.

Step 5

In a saucepan, combine the 75g of strawberry juice, 1/2 tsp of agar-agar powder, and 5g of allulose. Stir well with a spatula until there are no lumps before heating.

Step 6

Begin heating the mixture over medium heat. Stir continuously with the spatula. Once it starts to boil, reduce the heat to low.

Step 7

Continue to simmer over low heat for exactly 3 minutes, stirring constantly with the spatula in a ‘1’ or ‘O’ motion. This ensures the agar-agar dissolves completely and the jelly sets properly. Be careful not to let it burn.

Step 8

Carefully pour the hot strawberry jelly mixture into your prepared jelly molds. Pour slowly to avoid spills. It’s best to fill the molds about 80-90% full.

Step 9

If you don’t have a piping bag, you can use a scraper or the back of a spoon to smooth the surface of the jelly for a neat finish. Place the jelly molds in the refrigerator and let them set for about 15 minutes. Your delicious and healthy jelly is ready!
