Main Ingredients
  • Beef 200g (lean cut)
  • 1/4 head of Cabbage
  • 1 Onion
  • 3 Tomatoes
  • 8 Button Mushrooms

Seasoning & Broth
  • Tomato Sauce 1 serving (approx. 150-200g)
  • Chicken Stock 3 Tbsp
  • 1 Cheongyang pepper (optional, for added spice)
  • A little dried chili (optional, for a kick)

Cooking Instructions

Step 1

First, wash the fresh button mushrooms thoroughly under running water. Dice them into bite-sized pieces, about 1.5 cm cubes. Be careful not to cut them too small, as they might become mushy when cooked.

Step 2

Peel and wash the onion. Slice it into 0.5 cm thick strips to bring out its sweetness when sautéed.

Step 3

Remove the core from the cabbage and dice it into roughly 1.5 cm cubes. Using a generous amount of cabbage will enhance the flavor of the stew.

Step 4

Remove the stem from the fresh tomatoes and dice them into large chunks. You can leave the skin on, or for a smoother texture, blanch them in boiling water, peel, and then dice.

Step 5

Heat a little cooking oil in a deep pot or wok. Add the sliced onions and sauté over medium heat until they become translucent and release a sweet aroma. Sautéing the onions well is key to adding sweetness and depth to the stew.

Step 6

Once the onions are sufficiently sautéed, add the diced cabbage and cook until it wilts and softens. Continue to stir-fry until the cabbage loses its crispness and becomes tender.

Step 7

Now, add the beef. Any lean cut will work. Break up the meat with your spoon to prevent clumping and sauté until it’s browned on all sides. The juices released from the meat will enrich the stew’s flavor.

Step 8

Add the diced tomatoes to the pot with the browned meat and vegetables. The tomatoes will begin to release their juices as they cook.

Step 9

Cover the pot with a lid and let it simmer gently over low heat to allow all the ingredients to meld together. Initially, it will cook in the liquid released by the vegetables. If needed, you can add a little water or broth.

Step 10

Simmer gently for about 15-20 minutes, or until the ingredients are tender and the liquid has reduced to a thicker consistency. Maintain a medium-low heat and stir occasionally to prevent sticking to the bottom.

Step 11

When the ingredients are tender and the broth has thickened, add the sliced button mushrooms. Mushrooms can become mushy if added too early, so add them towards the end.

Step 12

Now it’s time to season. Add the tomato sauce and chicken stock to build the base flavor of the stew. If you desire a spicy kick, add the finely chopped Cheongyang pepper or dried chili at this stage. Adjust with salt and pepper to your taste.

Step 13

Once all ingredients and seasonings are well combined, remove the lid and simmer over medium heat for another 5-10 minutes. This allows the flavors to meld further and the stew to develop a richer taste. Simmer briskly until you reach your desired consistency.

Step 14

Your delicious Tomato Stew, or Witch’s Soup, is ready! Enjoy it hot to savor the rich, natural flavors of the ingredients. It makes for a satisfying meal served with rice or bread.
