Tofu Braising Ingredients
  • About 1/2 block firm tofu, cut into large pieces (pan-fried or pre-grilled is fine)
  • 1 bowl cooked pork galbi (rib meat), shredded or cut into bite-sized pieces
  • 1/2 onion, sliced thickly
  • 2 Korean green chilies (or jalapeños), thinly sliced
  • A little red chili, thinly sliced (for garnish)
  • 1/2 stalk green onion (scallion), cut diagonally
  • 1 Tbsp minced garlic
  • 1 cup anchovy-dashima broth (or water)

Braising Sauce
  • 3 Tbsp soy sauce for seasoning (Guk-ganjang or Jin-ganjang)
  • 1 Tbsp red pepper flakes (Gochugaru)
  • 1/2 Tbsp sugar

Cooking Instructions

Step 1

Prepare all your ingredients before you start cooking. Slice the onion thickly, and thinly slice the green and red chilies. Cut the green onion diagonally. If using regular firm tofu, cut it into large pieces and lightly pan-fry it. Shred or cut the cooked galbi into manageable, bite-sized pieces. In a small bowl, combine the anchovy-dashima broth (or water) with the soy sauce, red pepper flakes, and sugar. Whisk well to create the braising sauce.

Step 2

In a wide pot or pan, lay down the thickly sliced onions at the bottom. Arrange the prepared tofu pieces neatly on top of the onions. Pour the prepared braising sauce and the remaining anchovy-dashima broth (or water) over the tofu. Bring to a boil over medium heat.

Step 3

Once the liquid starts to simmer, add the shredded or cut galbi meat evenly over the tofu. This allows the rich flavor of the galbi to infuse into the braising liquid.

Step 4

To ensure the dish stays moist and flavorful, periodically spoon some of the braising liquid from the sides of the pot over the tofu and galbi. This helps distribute the seasoning evenly and keeps the ingredients tender.

Step 5

When the tofu has absorbed enough flavor and is tender, add the sliced green onions and chilies (green and red). Add the minced garlic as well for extra aroma. Let it simmer for a few more minutes.

Step 6

Continue to simmer until all the ingredients are well combined and the sauce has slightly thickened to your desired consistency. You can turn off the heat and let it rest for a few minutes to allow the flavors to meld further.

Step 7

Serve hot with steamed rice. This hearty braised tofu with galbi is a delightful way to enjoy leftover meat and create a wonderful meal!
