  • 7 fresh croaker fish (cleaned)
  • 3-4 medium-sized potatoes
  • 1 onion
  • 1/2 stalk of green onion
  • 2-3 chili peppers

Seasoning Ingredients
  • 2 Tbsp red pepper flakes (gochugaru)
  • 1/2 Tbsp red pepper paste (gochujang)
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce
  • 1 Tbsp anchovy sauce (fish sauce)
  • 1 cup anchovy or kelp broth (approx. 200-250ml)
  • 1 Tbsp oligosaccharide (or corn syrup)
  • 2 Tbsp cooking wine (or soju)
  • 3 Tbsp sesame oil

Cooking Instructions

Step 1

Start by preparing the base for your delicious stew! Wash and peel 3-4 medium-sized potatoes. Cut them into large chunks and arrange them evenly at the bottom of your pot. This prevents the fish from sticking and allows the potatoes to absorb the flavorful broth as they cook.

Step 2

Nicely cleaned croaker fish are then placed side-by-side on top of the potatoes. Try not to overlap them too much, so the seasoning coats evenly and the fish cooks through properly. Ensure any scales or internal organs have been thoroughly removed for the best taste.

Step 3

Peel and wash the onion, then slice it thinly. Arrange the sliced onion over the croaker fish. The natural sweetness of the onion will enhance the overall flavor of the stew.

Step 4

Now, let’s make the flavorful seasoning sauce! In a bowl, combine 2 Tbsp red pepper flakes, 1/2 Tbsp red pepper paste, 1 Tbsp minced garlic, 1 Tbsp soy sauce, 1 Tbsp anchovy sauce, 1 Tbsp oligosaccharide, and 2 Tbsp cooking wine. Mix these ingredients well. Pour in 1 cup of anchovy or kelp broth and stir until the sauce is smooth. Your delicious seasoning sauce is ready!

Step 5

Pour the prepared seasoning sauce evenly over the fish and potatoes in the pot. Make sure the sauce coats the fish well. This step ensures the fish absorbs all the delicious flavors. We’ll add the sesame oil later.

Cover the pot and simmer over low heat for about 15-17 minutes. It’s important to cook over low heat to prevent the fish from breaking apart. While the stew is simmering, periodically spoon some of the hot broth from the pot over the fish. This basting technique allows the seasoning to penetrate deeper into the fish, making it even more flavorful.

Step 7

After simmering for 15-17 minutes, remove the lid. Slice the green onion diagonally and the chili peppers into rounds. Arrange them attractively on top of the stew. Finally, drizzle 3 Tbsp of sesame oil all over and let it simmer for another 3-4 minutes. Your delicious croaker fish stew with potatoes is ready!
