Main Ingredients
  • 2 sheets of pre-made Galbi or Neobiani (Korean grilled short ribs)
  • 2 bowls of cooked rice
  • 1 cup of seasoned seaweed flakes (Gimjaban, adjust to taste)
  • 1 Tbsp sesame oil
  • 1 can (100g) tuna
  • Pickled radish (Danmuji), chopped

Mayo Sauce
  • 4 Tbsp mayonnaise
  • 1 Tbsp corn syrup or oligodang
  • 1 tsp lemon juice

Cooking Instructions

Step 1

Drain the oil from the canned tuna using a sieve. In a bowl, combine the drained tuna with 4 tablespoons of mayonnaise, 1 tablespoon of corn syrup (or oligodang), and 1 teaspoon of lemon juice. Mix well to create a delicious tuna-mayo mixture.

Step 2

Preheat a pan over medium-low heat. Grill the pre-made Galbi or Neobiani until golden brown on both sides. Once cooked, finely chop the Galbi into small pieces. Ensure the pieces are small enough to fit comfortably within the rice burger.

Step 3

Prepare the rice for the burger base. In a bowl, combine the cooked rice with 1 cup of seasoned seaweed flakes (Gimjaban) and 1 tablespoon of sesame oil. Mix thoroughly, adjusting the amount of Gimjaban to your preference for flavor and seasoning. Finely chop the pickled radish to add a refreshing crunch to the burger.

Step 4

Line a bowl with plastic wrap, ensuring it extends generously beyond the rim of the bowl to help shape the burger later. Spread the seasoned rice evenly onto the plastic wrap. Then, layer the filling: spread the tuna-mayo mixture over the rice, followed by the chopped Galbi, a drizzle of Tonkatsu sauce, and the chopped pickled radish. Top this with another layer of the tuna-mayo mixture, and finish by spreading a thin layer of rice over the top.

Step 5

Carefully gather the edges of the plastic wrap and tightly seal the top of the rice burger, forming a compact shape. Invert the bowl, and gently press to release the formed rice burger. Your hearty Galbi Mayo Rice Burger is now complete! Unwrap and enjoy.
