So, here’s a fantastic way to make it without any wooden skewers at all! The chewy and satisfying king oyster mushrooms act as a natural skewer, holding all the delicious ingredients together. This recipe creates beautiful and flavorful jeon, perfect for making your holiday table extra special!
Main Ingredients
- 90g Beef Eye Round
- 7 stalks Green Onions
- 1/3 Carrot
- 3-4 King Oyster Mushrooms
- 1 Red Chili Pepper (for garnish)
Egg Wash Ingredients
- 3-4 Eggs
- 1.5 Tbsp Cornstarch
- 1/3 tsp Salt
- 1 tsp Sesame Oil
Beef Seasoning Ingredients
- 1/2 Tbsp Soy Sauce
- 1/2 Tbsp Sesame Oil
- 1/2 Tbsp Minced Garlic
- Pinch of Black Pepper
- 3-4 Eggs
- 1.5 Tbsp Cornstarch
- 1/3 tsp Salt
- 1 tsp Sesame Oil

Cooking Instructions
Step 1
First, clean the king oyster mushrooms and slice them lengthwise into approximately 0.5 cm thick pieces. These will serve as the base for your ‘skewer’, so aim for uniform thickness.
Step 2
Peel the carrot and slice it lengthwise to match the thickness of the king oyster mushrooms. Trim the green onions and cut them to a similar length. Slice the beef eye round into pieces that will complement the other ingredients.
Step 3
In a bowl, combine the 90g of sliced beef eye round with 1/2 Tbsp sesame oil, 1/2 Tbsp soy sauce, 1/2 Tbsp minced garlic, and a pinch of black pepper. Gently mix and marinate the beef, ensuring it’s well coated.
Step 4
In a separate bowl, whisk together 3-4 eggs, 1.5 Tbsp cornstarch, 1/3 tsp salt, and 1 tsp sesame oil until smooth to create the egg wash. Make sure there are no lumps of cornstarch and the egg whites are fully incorporated.
Step 5
Lightly dust one side of the prepared king oyster mushroom slices with a thin layer of cornstarch or flour. This helps the egg wash adhere better, resulting in a prettier jeon. Then, thoroughly coat the mushrooms with the egg wash.
Step 6
Heat a frying pan over medium-low heat with a generous amount of cooking oil. Place the egg-washed king oyster mushroom slices onto the pan. Artfully arrange the marinated beef, carrot slices, green onions, and a piece of red chili pepper on top of each mushroom slice for a beautiful presentation.
Step 7
Cook the assembled jeon, flipping gently, until both sides are golden brown and cooked through. Cooking over medium-low heat is key to ensure the ingredients cook evenly without burning. Once beautifully golden on both sides, your Sanjeok Jeon is ready to be enjoyed!
