Key Ingredients
- 1.5 Tbsp homemade Doenjang (Korean fermented soybean paste, approx. 30g)
- 300ml vegetable broth (or anchovy-kelp broth)
- 300ml water
- 1 bunch fresh spinach (generous amount)
- 1/2 small onion, thinly sliced
- 1/4 green onion, diagonally sliced
- 1 Korean green chili pepper, diagonally sliced (optional)
Cooking Instructions
Step 1
Start by adding 1.5 tablespoons of your homemade Doenjang (about 30g) to a pot. The saltiness of Doenjang can vary by brand, so feel free to adjust the amount according to your preference.
Step 2
Pour in 300ml of vegetable broth. Using vegetable broth will add a deeper, richer flavor to your soup. If you don’t have vegetable broth, plain water or anchovy-kelp broth can be used as alternatives.
Step 3
Add 300ml of water to create a total of 600ml of broth base.
Step 4
Dissolve the Doenjang. If there are clumps, break them up with a spoon. Bring the mixture to a simmer over medium heat. Once it starts to boil, skim off any foam that rises to the surface for a cleaner-tasting broth.
Step 5
While the broth simmers, prepare the vegetables. Thinly slice half a small onion, and diagonally slice a quarter of a green onion. If you prefer a spicy kick, diagonally slice one Korean green chili pepper after removing the seeds.
Step 6
Once the Doenjang broth is boiling, add the prepared sliced onion, green onion, and Korean green chili pepper. Let it simmer for a bit longer to allow the flavors of the vegetables to infuse into the broth.
Step 7
Add a generous amount of thoroughly washed spinach. Spinach cooks very quickly. Once added, cover the pot immediately and simmer just until the spinach wilts and becomes tender. Avoid overcooking, as this can cause the spinach to lose its vibrant color and become mushy.
Step 8
Your delicious Spinach Doenjang Soup is now ready!
Step 9
Ladle the soup into warm serving bowls.
Step 10
Enjoy the wonderfully rich flavor of homemade Doenjang, complemented by fresh spinach and a subtle, pleasant hint of spice – a truly captivating broth!
Step 11
