My son, who absolutely loves tteokbokki, really wanted to try it, so for our weekend cheat day, I made this amazing ‘Cheesy Bomb Spam Tteokbokki’ where spam and cheese flow like a waterfall! The key ingredients for this ‘Stars’ Top Recipe’ Spam Tteokbokki are chewy wheat flour rice cakes (instead of rice cakes), and spam instead of fish cakes – spam guarantees deliciousness! Ingredients
  • Wheat flour rice cakes (tteokbokki tteok) 500g
  • 1 stalk green onion
  • 1 onion
  • 1 small can Spam
  • 150g mozzarella cheese
  • Olive oil, to taste

Spam Tteokbokki Seasoning
  • 2 Tbsp soy sauce
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp sugar
  • 1 Tbsp minced garlic
  • 1/2 onion, finely chopped (measured separately)
  • 400ml water
  • 1 Tbsp vinegar

Cooking Instructions

Step 1

First, prepare the star of our dish: 500g of wheat flour rice cakes. Rinse the rice cakes thoroughly under running water and drain them well in a colander. We’re making tteokbokki with these wonderfully chewy and savory wheat flour rice cakes!

Step 2

Next, let’s prepare the Spam, which will add a rich flavor to our tteokbokki. Simply rinse the Spam under cool running water. This helps remove any excess oil or additives from the surface. (Ryusuyoung mentioned that rinsing the Spam in water is enough to remove additives.)

Step 3

Now, we’ll mash the Spam for the tteokbokki. Cut the Spam into manageable pieces and place them in a disposable plastic bag. Then, use your palm to firmly press and mash the Spam. Ryusuyoung used half a can, but you can adjust the amount to your preference.

Step 4

Let’s also prepare the vegetables that will enhance the flavor of our tteokbokki. Finely chop the onion and slice the green onion into large diagonal pieces. Picking out the sweet, cooked green onion from the tteokbokki is one of the joys of this dish!

Step 5

Heat a generous amount of olive oil in a frying pan. Add the mashed Spam and stir-fry until it turns golden brown and slightly crispy. Once the Spam is cooked, add the sugar and minced garlic, and stir-fry together with the Spam until fragrant.

Step 6

Once the Spam is nicely browned and appetizing, push it to one side of the pan. We’ll use the empty space in the pan for the next step.

Step 7

Pour 2 tablespoons of soy sauce into the empty space in the pan. Let the soy sauce sizzle and caramelize slightly. Then, stir-fry it together with the Spam, mixing well. This process infuses the Spam with the deep flavor of the soy sauce, making it even more delicious.

Step 8

Now it’s time to create the base for our tteokbokki sauce. (I accidentally added the water first, but the original recipe suggests stir-frying the gochujang before adding water!) Pour 400ml of water over the stir-fried Spam and soy sauce mixture.

Step 9

Add 2 tablespoons of gochujang (Korean chili paste), 1 tablespoon of gochugaru (Korean chili flakes), and the finely chopped onion and large green onion pieces. Now, add the 500g of wheat flour rice cakes to the pot.

Step 10

After adding the rice cakes, here comes Ryusuyoung’s special secret for Spam Tteokbokki: add 1 tablespoon of vinegar! Vinegar really enhances the umami and savory taste of the tteokbokki. Stir everything well to prevent the rice cakes from sticking together.

Step 11

Let the tteokbokki simmer for about 5 minutes after adding the rice cakes. The sauce will thicken and become wonderfully glossy. Here’s a tip from Ryusuyoung: you know the sauce is ready when you draw a line through it with a spoon, and the line holds its shape for a moment.

Step 12

Now, let’s create that amazing cheese waterfall effect! Fill a suitable mug with 150g of mozzarella cheese. Cover the top of the mug with a plate, and microwave for 1 minute to melt the cheese.

Step 13

Carefully remove the mug from the microwave and stir the melted cheese with chopsticks to loosen it up. Place it back in the microwave for another minute. This will create a gooey cheese waterfall! Simply pour this melted cheese over your tteokbokki for a spectacular cheesy bomb experience.
