Main Ingredients
  • 1 bowl of well-fermented kimchi (standard rice bowl)
  • 2 servings of warm cooked rice
  • 1 small can of Spam

Seasoning (Tablespoon basis)
  • 1 Tbsp sugar
  • 1 Tbsp Dashida (MSG-based seasoning powder)
  • 0.5 Tbsp corn syrup or rice syrup
  • 0.5 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

This recipe is for 2 servings. However, you can easily divide it to make 1 serving at a time. You’ll find the portion surprisingly generous, so feel free to enjoy it over two meals!

Finely chop the kimchi into bite-sized pieces. Cutting it too large might make it awkward to eat when fried.

Similarly, dice the Spam into pieces roughly the same size as the kimchi. If you prefer a chewier texture, you can cut them slightly larger.

Heat a frying pan over medium-high heat and add a generous amount of cooking oil. Add the chopped kimchi and Spam. Stir-fry until the kimchi’s sharp aroma mellows and the Spam becomes lightly golden brown.

Add 1 tablespoon of sugar to balance the tartness of the kimchi and add a subtle sweetness.

Here’s the secret to that deep umami flavor: add 1 tablespoon of Dashida! This is what gives the fried rice its addictively ‘junky’ and rich taste.
