Whole Wheat Bread Ingredients
- Whole wheat flour (Korean whole wheat recommended) 500g
- Instant dry yeast 5g
- Salt 7g
- Warm water (room temperature water in summer) 350g
- Pumpkin seeds 30g
- Sunflower seeds 30g
- Flax seeds 30g
Cooking Instructions
Step 1
Firstly, prepare your whole wheat flour. Using flour made from Korean wheat is recommended (e.g., purchased from Hansalim).

In a large bowl, combine the whole wheat flour, pumpkin seeds, sunflower seeds, flax seeds, yeast, and salt. Mix them together. Then, gradually add the water and begin to knead the dough. While warm water is best for activating yeast in cooler weather, you can use room-temperature water in the summer.

Once the ingredients are roughly combined in the bowl, transfer the dough to a clean work surface. Knead the dough by hand until it becomes smooth, elastic, and develops a good gluten structure. Hand-kneading, although time-consuming, is key to achieving a great texture in your bread.

After kneading, place the dough back into the bowl, cover it with plastic wrap or a damp cloth, and let it rise in a warm place for the first proof. If your kitchen is cool, you can cover the bowl with a blanket or throw to maintain warmth and encourage a better rise. Allow it to rise for about 1 hour, or until it has doubled in volume.

Once the dough has doubled, gently punch it down to release the accumulated gas. Reshape it into a ball and let it rest (second proof/bench rest) for about 15-20 minutes. This resting period allows the gluten to relax, making the dough easier to shape later.

After the second rest, shape the dough into your desired bread form and place it on a baking sheet. Allow it to rise again until it has nearly doubled in size (second proof). Once proofed, bake in a preheated oven at 200°C (390°F) for about 30 minutes. Keep in mind that baking time and temperature may need to be adjusted based on your oven and the size of your loaf. Check for doneness by looking for a golden-brown crust and ensuring the inside is fully cooked.
