Scone Dough Ingredients
  • 70g Bread Flour
  • 130g Cake Flour
  • 85g Cold Butter (cubed)
  • 30g Granulated Sugar
  • 50g Egg (room temperature)
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 45g Milk
  • 5g Vinegar
  • 3-5g Salt (adjust to taste)

For Shaping (Optional)
  • Egg wash or milk (for brushing the top)

Cooking Instructions

Step 1

In a large bowl, combine the bread flour, cake flour, baking powder, baking soda, granulated sugar, and salt. Mix the dry ingredients thoroughly. Add the cold, cubed butter to the bowl. Using a pastry blender or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs, with some pea-sized pieces of butter remaining. This ensures a tender scone.

Step 2

In a small bowl, whisk together the milk and vinegar and let it sit for a moment; this slightly curdles the milk, enhancing the texture. Add this milk mixture and the room-temperature egg to the flour and butter mixture. Gently mix with a spatula or your hands just until the dry ingredients are incorporated and no streaks of flour remain. Be careful not to overmix, as this can make the scones tough.

Step 3

Once the dough just comes together, wrap it in plastic wrap or cover the bowl and refrigerate for at least 30 minutes. This resting period allows the gluten to relax, resulting in a more tender and flavorful scone.

Step 4

Lightly flour your work surface and turn out the chilled dough. Gently press the dough flat with your palm, then fold it in half, and then in half again, repeating this folding process 2-3 times. This creates layers within the scone, giving it a beautiful texture when baked.

Step 5

Divide the dough into 6-8 equal portions, shaping them into your desired scone size. Brush the tops of the divided scones with egg wash or milk for a golden-brown finish.
