  • 1/4 apple
  • 10ml capers (1 tsp)

  • 40ml mayonnaise (approx. 4 Tbsp)
  • 15ml white wine vinegar (approx. 1.5 Tbsp)
  • 5ml oligosaccharide (approx. 1 tsp)
  • 5ml lemon juice (approx. 1 tsp)

Cooking Instructions

Step 1

First, let’s prepare the potatoes and hard-boiled egg. Wash the potato thoroughly, place it in a pot, cover with water, and boil for about 15-20 minutes until tender. Boil the egg until hard-cooked. Meanwhile, cook the macaroni. Use a large pot with plenty of water and a generous amount of salt; this ensures the macaroni is seasoned well from the inside out, preventing a bland taste later. Once the water boils, add the macaroni and cook according to package directions. After cooking, peel the potatoes and egg. Mash them to your desired consistency using a fork or a masher. You can also simply mash them by hand for a rustic texture. If you like, you can add some crushed slivered almonds and a sprinkle of parsley flakes.

Now, let’s make the star of the salad: the dressing. In a blender, combine the mayonnaise, white wine vinegar, lemon juice, and capers. While you can skip blending, doing so helps to break down the capers for a smoother texture that integrates well with the other ingredients, preventing large pieces from being too noticeable. Blending creates a beautifully smooth and emulsified dressing. Season with a pinch of salt and pepper to taste. You can also add a touch more oligosaccharide or sugar if you prefer a slightly sweeter dressing.

With all components prepared, it’s time to assemble the delicious salad. Drain the cooked macaroni and let it cool slightly. Peel the apple, remove the core, and dice it into small, crisp pieces. It’s best to dice the apple just before mixing to prevent browning. In a large bowl, combine the mashed potatoes, cooked macaroni, diced apple, and the blended dressing. Gently fold everything together until well combined, ensuring all ingredients are evenly coated with the dressing. Avoid overmixing. The salad can be served immediately or chilled in an airtight container for 2-3 days.
