Quick & Easy Fridge-Cleanout Sandwich
Whip up a Delicious Sandwich in Under 30 Minutes Using Frozen Bread!
Don’t let that frozen bread go to waste! This sandwich recipe is a speedy and incredibly tasty way to use it up. The best part? You can prepare the filling in advance, and then simply toast some bread whenever a sandwich craving strikes. It’s super easy and delicious!
Main Ingredients
- 8 slices of bread
- 3 eggs
- 2 pieces of imitation crab meat (kani)
- 1/4 onion
- 3 slices of carrot
- Shredded red cabbage (about the same amount as the onion)
- About 20 pieces of pickles
Cooking Instructions
Step 1
First, let’s boil the eggs for the sandwich filling. We’ll boil 2 eggs (setting aside 1 egg for later). Add a little vinegar and salt to boiling water. Once the water is at a rolling boil, cook on high heat for 1 minute, then reduce to medium heat and simmer for about 13 minutes until hard-boiled.
Step 2
While the eggs are boiling, prepare the pickles. Press the pickles firmly with a paper towel to squeeze out excess moisture, then finely chop them. This step helps prevent the sandwich filling from becoming watery.
Step 3
Finely chop the 1/4 onion. If you find raw onion too pungent, you can soak the chopped onion in cold water for about 5 minutes and then squeeze out the water before using.
Step 4
Thinly shred the red cabbage, aiming for a similar quantity to the chopped onion. The vibrant color adds a beautiful visual appeal to the sandwich.
Step 5
We’re using 3 pre-sliced carrot slices. Slicing them thinly adds a delicate texture.
Step 6
Shred the 2 pieces of imitation crab meat (kani) with your hands. Avoid shredding them too finely; leaving some texture makes for a more satisfying bite.
Step 7
Once all the vegetables are chopped and the crab meat is prepared, your eggs should be perfectly hard-boiled. Immediately transfer the boiled eggs to a bowl of cold water to cool them down. Once cool enough to handle, peel the eggs and place them in a mixing bowl. Mash the eggs thoroughly using a fork or a potato masher.
Step 8
To the mashed eggs in the bowl, add the prepared chopped pickles, chopped onion, shredded red cabbage, sliced carrots, and shredded imitation crab meat. Sprinkle in a pinch of black pepper, add 1/2 Tbsp of mustard sauce and 6 Tbsp of mayonnaise. (Feel free to adjust the amount of mayonnaise to your liking). Mix all the ingredients together gently until well combined.
Step 9
While you can use the bread as is, toasting it lightly will give you a wonderfully crispy and flavorful sandwich. Toast the bread slices in a pan or toaster until they are golden brown and slightly crisp.
Step 10
Generously spread the prepared sandwich filling onto the toasted bread slices. You can add other toppings or vegetables if you like. Cut the sandwich in half and serve beautifully plated for a delicious meal. Any leftover filling can be stored in the refrigerator for future use!
