Quick & Easy Oyster Sauce Stir-Fried Udon

Today, I’m sharing a super simple recipe that’s perfect for those days when you’re feeling a bit lazy. With just some leftover vegetables from your fridge and udon noodles, you can whip up this delicious stir-fried udon in no time! It’s a satisfying meal or a great snack to enjoy with drinks.
Main Ingredients
- 2 servings Udon noodles
- 3 leaves Napa cabbage
- 1/2 Onion
- 1/4 Carrot
- 1/2 Green onion stalk
- 100g Spam (half of a small can)
- 1 Frankfurter sausage
Sauce & Seasoning
- 2 Tbsp Cooking oil
- 1 Tbsp Minced garlic
- 2 Tbsp Oyster sauce
- 2 Tbsp Cooking wine (like Mirin)
- 1/2 Tbsp Sugar
- 2 Tbsp Soy sauce
- Pinch of Black pepper
- 1 Tbsp Toasted sesame seeds
- 1 Tbsp Sesame oil
- 2 Tbsp Cooking oil
- 1 Tbsp Minced garlic
- 2 Tbsp Oyster sauce
- 2 Tbsp Cooking wine (like Mirin)
- 1/2 Tbsp Sugar
- 2 Tbsp Soy sauce
- Pinch of Black pepper
- 1 Tbsp Toasted sesame seeds
- 1 Tbsp Sesame oil
Cooking Instructions
Step 1
Boil the udon noodles according to the package instructions. Once cooked, immediately rinse them under cold water to prevent them from becoming mushy and set aside.
Step 2
Wash and prepare all your vegetables. Slice the Napa cabbage, onion, and carrot into strips of about 0.5 cm thickness. Cut the green onion diagonally. Slice the Spam and frankfurter sausage into thin, bite-sized pieces (about 0.5 cm thick). Cutting all the ingredients into similar lengths makes them easier to eat with the noodles.
Step 3
Heat 2 tablespoons of cooking oil in a wide pan over medium heat. Add the minced garlic and sliced green onions, stirring until fragrant. Be careful not to burn them by keeping the heat at medium. Once the aromatics are fragrant, add all the prepared vegetables (onion, carrot, Napa cabbage), Spam, and frankfurter sausage. Stir-fry until the onions become translucent and the Napa cabbage softens slightly. Add 2 tablespoons of oyster sauce, 2 tablespoons of cooking wine, and 1/2 tablespoon of sugar, mixing well to season. Push the ingredients to one side of the pan. Increase the heat to high, pour the 2 tablespoons of soy sauce along the edge of the pan, and let it caramelize slightly before mixing everything together. Caramelizing the soy sauce adds a wonderful depth of flavor and a hint of smoky aroma, making your stir-fried udon even more delicious.
Step 4
Add the prepared udon noodles to the pan and toss everything together well. Taste the noodles and adjust seasoning with more oyster sauce or soy sauce if needed. I found the seasoning perfect as is, so I didn’t add any extra. Sprinkle with black pepper to your liking. Turn off the heat, then drizzle with 1 tablespoon of toasted sesame seeds and 1 tablespoon of sesame oil to finish. Your simple and delicious stir-fried udon is ready! Enjoy it hot.
