Main Ingredients
  • 6 cherry tomatoes
  • 1/2 bell pepper (use various colors for visual appeal)
  • 1/3 cucumber
  • 1/2 onion
  • 2 servings of kal-guksu noodles (thick wheat flour noodles)
  • 1 piece of chicken breast (approx. 200g)
  • 2 packs of pre-made cold noodle soup broth (naengmyeon broth)

Chicken Marinade & Seasoning
  • 1/2 Tbsp minced garlic
  • 2 Tbsp vinegar
  • 1 Tbsp plum extract (or syrup)
  • Pinch of black pepper
  • 1 Tbsp mustard powder

Cooking Instructions

Step 1

First, prepare the vegetables for your Chogye-tang. Wash 6 cherry tomatoes and cut them in half. Thinly slice 1/2 bell pepper after removing the seeds (using different colors will make the dish visually appealing!). Wash 1/3 cucumber and cut it into thin matchsticks. Thinly slice 1/2 onion and soak it in cold water for a few minutes to mellow its sharp flavor, then drain well. This step ensures the onions are crisp and less pungent.

Step 2

Boil 1 piece of chicken breast (about 200g) in water for about 15-20 minutes until fully cooked. Once cooked, remove the chicken from the water, let it cool slightly, then shred it or cut it into bite-sized pieces, following the grain of the meat. In a bowl, combine the shredded chicken with the marinade ingredients: 1/2 Tbsp minced garlic, 2 Tbsp vinegar, 1 Tbsp plum extract, a pinch of black pepper, and 1 Tbsp mustard powder. Gently mix everything together, ensuring the chicken is well coated. Let it marinate for a few minutes to allow the flavors to meld.

Step 3

Cook 2 servings of kal-guksu noodles in boiling water. It’s recommended to cook them for about 1-2 minutes longer than the package instructions suggest, or around 8 minutes, for a nicely chewy texture. As soon as the noodles are done, drain them immediately and rinse them thoroughly under cold running water to wash away excess starch. Drain them very well to prevent them from becoming mushy. This ensures the noodles remain firm and delicious.

Step 4

Now it’s time to assemble and enjoy your Chogye-tang! In a large bowl, place the cooked kal-guksu noodles. Artfully arrange the prepared vegetables – halved cherry tomatoes, sliced bell peppers, cucumbers, and onions – over the noodles. Generously top with the marinated shredded chicken. Pour in 2 chilled packs of naengmyeon broth. Taste the broth and adjust the seasoning if needed by adding a little more vinegar or sugar to your preference. Mix everything well and enjoy! This tangy, refreshing Chogye-tang is the perfect antidote to a hot day.
