Main Ingredients
  • 20g dried seaweed
  • 1 cucumber
  • 1/2 onion
  • 1 red chili pepper

Seasoning
  • 1/2 Tbsp fine salt
  • 1 Tbsp sugar
  • 2 Tbsp vinegar
  • 1/2 Tbsp minced garlic
  • 1 Tbsp cooking wine (like mirin)

Cooking Instructions

Step 1

First, soak the dried seaweed in cold water for about 20 minutes until it is fully rehydrated. This is a good time to prepare the other vegetables.

Step 2

Wash the cucumber and onion thoroughly. If the cucumber’s skin is tough, you can peel it with a vegetable peeler.

Step 3

Slice the prepared cucumber and onion into thin strips (julienne). Uniform slicing is important for the best texture.

Step 4

Lightly salt and sugar the julienned cucumber and onion separately, using about 1/3 Tbsp of salt and 1/3 Tbsp of sugar for each. Let them sit for 10 minutes, then gently squeeze out excess water to maintain a crisp texture.

Step 5

Rinse the rehydrated seaweed under cold running water 3-4 times to remove any debris. If you are sensitive to the sea-like smell of seaweed, you can blanch it in boiling water for about 10 seconds, then immediately rinse with cold water and chill to reduce the odor. However, for a more authentic flavor, simply rinsing and squeezing out the water is recommended. In a bowl, combine the rinsed seaweed, prepared vegetables, and all the seasoning ingredients (1/2 Tbsp fine salt, 1 Tbsp sugar, 2 Tbsp vinegar, 1/2 Tbsp minced garlic, 1 Tbsp cooking wine). Gently mix everything together with your hands until well combined. This completes the basic sweet and sour version of the salad!

Step 6

To make a spicy version, add 1 Tbsp of fine chili powder to the basic mixture. Gently mix again with your hands until the chili powder is evenly distributed. This creates the spicy flavored seaweed salad.

Step 7

Both versions of the refreshing seaweed salad are now ready! You can serve them side-by-side, divided in half, or choose your favorite flavor. Enjoy this delicious dish that’s perfect for brightening up your mealtime.
