The Ultimate Homemade Ragu Sauce: Crafting Authentic Bolognese Pasta with Fresh Tomatoes and Rich Meat

Pasta Ingredients
- Spaghetti for 2 servings
- 200g Ground beef
- 1 Tbsp Soy sauce
- Pinch of Black pepper
- 1 Tbsp Plum wine (or Mirin)
- 1/2 tsp Garlic powder
- 1/2 tsp Basil powder
- 1 Tbsp Minced garlic
- 1/2 Onion, finely chopped
- 1/4 head Broccoli
- 1/4 cup Diced carrots
- 2 Ripe tomatoes (or 400g canned whole tomatoes)
- 2 Tbsp Ketchup
- 1 Tbsp Worcestershire sauce
- A few fresh Basil leaves
- 2 Tbsp Grated cheese (Parmesan, etc.)
- 50g Mozzarella cheese
- Pinch of Parsley flakes
- Pinch of Salt
- 2 Tbsp Cooking oil
Cooking Instructions
Step 1
Heat 2 Tbsp of cooking oil in a deep pan or pot over low heat. Add 1 Tbsp of minced garlic and sauté until fragrant, being careful not to burn it.
Step 2
Add 1/2 finely chopped onion and increase the heat to medium. Sauté until the onion becomes translucent and releases its sweet aroma. Add a pinch of salt to enhance the sweetness and season lightly.
Step 3
Cut the broccoli into bite-sized florets. Finely chop the tougher stem parts as well and add them to the pan. Sauté for 1-2 minutes to incorporate their nutrients and flavor into the sauce base.
Step 4
Season 200g of ground beef with 1 Tbsp soy sauce, 1 Tbsp plum wine, a pinch of pepper, 1/2 tsp garlic powder, and 1/2 tsp basil powder. Add the seasoned ground beef to the pan and cook, breaking it apart with a spoon or spatula, until it is fully browned and no pink remains.
Step 5
Add 1/4 cup of diced carrots and 2 ripe tomatoes to the pan. For a smoother sauce, you can peel the tomatoes after briefly blanching them in boiling water. Chop them roughly and add them. Stir everything together and cook for a moment, then cover the pan with a lid and simmer over medium heat for 15-20 minutes, allowing the sauce to thicken and flavors to meld.
Step 6
While the sauce is simmering, bring a large pot of salted water to a boil. Cook 2 servings of spaghetti according to package directions, but drain them about 1 minute before they reach al dente. This ensures the pasta will finish cooking perfectly in the sauce.
Step 7
Once the sauce has thickened, stir in 2 Tbsp of ketchup and 1 Tbsp of Worcestershire sauce. Add a generous amount of 2 Tbsp grated cheese and mix well until combined.
Step 8
Add the blanched broccoli and fresh basil leaves to the sauce and toss gently. Transfer the drained spaghetti directly into the sauce pan. Toss quickly to coat the pasta evenly with the rich ragu sauce.
Step 9
Option 1: Melt 50g of mozzarella cheese directly over the pasta in the warm pan. Option 2: Serve the pasta onto plates, top generously with mozzarella cheese, and then heat in a microwave or oven until the cheese is melted and bubbly. Baking it briefly in the oven adds an extra layer of deliciousness.

Garnish with parsley flakes or fresh basil leaves for a beautiful finish to your homemade Bolognese pasta!
