Main Ingredients
  • 1/4 Korean radish (approx. 300g)
  • 1/2 Tbsp minced garlic
  • 2 Tbsp perilla oil
  • 2 Tbsp ground perilla seeds (deulkkae garu)
  • A pinch of sesame seeds (for garnish)

Seasoning
  • 1 to 1.5 Tbsp salt (adjust to taste and radish saltiness)

Cooking Instructions

Step 1

Begin by washing the radish thoroughly. Peel it, then slice it thinly into matchsticks, about 0.3cm thick. Aim for uniform thickness so the radish cooks evenly.

Step 2

Heat 2 tablespoons of perilla oil in a pan or pot over medium-low heat. Let the oil warm up gently to release its fragrant aroma.

Step 3

Once the perilla oil is warm, add all the julienned radish to the pan. Adjust the heat to medium.

Step 4

Add the minced garlic and sauté the radish over medium heat until it becomes tender and slightly translucent. You’ll notice the garlic becoming fragrant as the radish softens.

Step 5

Now it’s time to season with salt. Start with 1 tablespoon of salt and stir well. After a brief sauté, taste the radish and add another 0.5 tablespoon if needed. (1 to 1.5 tablespoons total is usually good, but adjust based on the saltiness of your salt and personal preference.)

Step 6

Continue to sauté the radish with the salt. You’ll see the white radish turning slightly transparent as it cooks. At this point, add 2 tablespoons of ground perilla seeds for a rich, nutty flavor.

Step 7

Stir the ground perilla seeds into the radish and cook for another 1-2 minutes, mixing gently. Ensure the perilla seeds are evenly distributed and not clumped. Finally, taste and adjust seasoning if necessary. Once the flavor is perfect, transfer the radish salad to a serving container. Sprinkle with sesame seeds for garnish. This delicious and nutty Deulkkae Musnamul is ready to be enjoyed warm or chilled!
