Fried Rice Ingredients
  • 1 Egg
  • 2 Fresh Perilla Leaves (깻잎)
  • 2 Tbsp Minced Ham (your favorite kind)
  • 2 Tbsp Minced Onion (finely chopped)
  • 1 Tbsp Minced Carrot (adds a nice texture)
  • 1 Tbsp Minced Red Bell Pepper (for vibrant color)
  • 1 Tbsp Minced Zucchini (adds a soft touch)
  • 1 Tbsp Minced Green Onion (for flavor)
  • 3 Tbsp Cooking Oil (use generously)
  • 1 bowl Warm Cooked Rice (reheat cold rice beforehand)

Flavorful Seasoning
  • 1 Tbsp Oyster Sauce (enhances the flavor of the fried rice)

Cooking Instructions

Step 1

First, prepare the vegetables for your fried rice. Finely chop the carrot, red bell pepper, zucchini, onion, and green onion into small pieces. Mince the ham as well so it blends well with the rice.

Step 2

Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Crack in 1 egg and whisk it. Stir the egg as it cooks to create soft scrambled eggs. Cook just until set but still moist, then set aside.

Step 3

Add the remaining 2 Tbsp of cooking oil to a clean pan and heat over medium-low heat. Add the minced green onion and onion, and sauté until fragrant. Once the onion becomes translucent, add the next ingredients.

Step 4

Add the chopped carrot, red bell pepper, and zucchini, and stir-fry for about 1 minute to slightly soften the vegetables. Stir to ensure the ingredients are evenly mixed.

Step 5

Now, add the minced ham and cook for another 30 seconds. The ham will release some of its fat, adding more flavor.

Step 6

Add the 1 bowl of warm cooked rice and 1 Tbsp of oyster sauce. Turn the heat up to high and stir-fry quickly until all ingredients are well combined. Continue stir-frying until the rice grains are separated and the sauce is evenly distributed.

Step 7

Wash the 2 perilla leaves thoroughly, pat them dry, and thinly slice them into shreds. The aromatic quality of the perilla leaves will add another layer of flavor to your fried rice.

Step 8

Transfer the finished fried rice to a serving bowl. Generously top with the shredded perilla leaves. Finally, place the reserved soft scrambled eggs on top to complete your delicious Scrambled Egg Fried Rice!
