I brought home these gorgeous eggplants from the supermarket for just 500 won each! Using these fresh and delicious eggplants, I’ve created an easy and tasty Eggplant Over Rice recipe. The soft and moist eggplant combined with the savory meat sauce creates a satisfying meal. You can prepare an impressive dish with just a few simple ingredients.
Main Ingredients
- 3 Eggplants
- 100g Minced Pork
- Generous amount of Green Onion (white parts preferred)
- 1 Red Chili Pepper
- 1 Green Chili Pepper
- 1 Tbsp Sesame Seeds
- 1 Tbsp Minced Garlic

- 2 Tbsp Soup Soy Sauce (Guk-ganjang)
- 2 Tbsp Oyster Sauce
- 1 Tbsp Sugar

Hello everyone! Today, I’ll introduce a super simple Eggplant Over Rice recipe using fresh, seasonal eggplants. It’s so delicious, you’ll finish a whole bowl of rice!

Wash the eggplants thoroughly and remove the stems. Cut them in half lengthwise, then slice diagonally into about 0.7cm thick pieces. Slicing them this way ensures they maintain a good texture when cooked and absorb the sauce beautifully.

Season the minced pork with a pinch of salt and pepper. Finely chop the green onions, focusing on the white parts. Heat a generous amount of cooking oil in a pan over low heat. Add the chopped green onions and slowly stir-fry until fragrant, creating green onion oil. This step helps remove any porky odor and adds a wonderful aroma.
Step 4
Once the green onion oil is fragrant, add the seasoned minced pork to the pan. Break up any clumps and stir-fry over medium heat until the pork is mostly cooked. Then, add the sliced eggplants and stir-fry together until the eggplants soften and become tender.

When the eggplants and pork are almost cooked, add all the sauce ingredients (soup soy sauce, oyster sauce, sugar, cooking wine) to the pan. Stir well and cook until everything is evenly coated. It’s important to cook over medium-low heat to prevent the sauce from burning.

Finally, add 1 tablespoon of sesame seeds. You can also add a drizzle of sesame oil for an extra nutty flavor, if you like. Stir-fry for another moment until the mixture looks glossy.

Finely chop the red and green chili peppers and add them to the pan at the end. Stir-fry briefly. This adds a beautiful color and a hint of spice, making the dish even more delicious. Be careful not to overcook, or the spiciness might become too intense.
