  • 10cm section of scallion (white part)

Seasoning
  • 0.3 tsp fine salt (or 0.5 tsp soy sauce for soup)
  • 0.5 tsp toasted sesame oil
  • 1 tsp toasted sesame seeds (generous amount)

Cooking Instructions

Step 1

First, prepare your fresh spinach. Trim the root ends, remove any yellowed leaves, and wash thoroughly. Bring a generous amount of water to a boil in a pot, and add 0.5 tsp of salt to season the water. This step helps the spinach become greener and crisper. Once the water is boiling, add the two handfuls of spinach and blanch for about 30-40 seconds. Be careful not to overcook, as it will become mushy.

Step 2

Immediately after blanching, drain the spinach and squeeze out excess water by hand. Removing as much water as possible prevents the dish from becoming watery and helps the seasoning to be absorbed well. Next, finely chop the 10cm section of the scallion (white part). In a bowl, combine the squeezed spinach, chopped scallion, 1 tsp of toasted sesame seeds, 0.3 tsp of fine salt, and 0.5 tsp of sesame oil. (You can also use soy sauce for soup instead of salt for a different flavor profile.) Gently mix everything together with your hands, tossing and combining until the seasoning is evenly distributed. Be gentle to avoid mashing the spinach.
