Simple Egg Curry
Simple Diet Egg Curry Recipe for Fitness Enthusiasts (57.5g Protein, 18g Fat, 77g Carbs/24%)
Here’s an ultra-simple diet recipe for you all! This is a high-protein recipe that can help both beginners and seasoned fitness buffs! It’s a healthy recipe designed with both taste and nutrition in mind!
Ingredients
- 1 serving rice (under 150g)
- 1 serving chicken breast
- 1 block solid curry roux
- 3 eggs
- 1 pack plain soy milk
- A pinch of parsley
- A pinch of black pepper
- A little Sriracha sauce (optional)
Cooking Instructions
Step 1
Cook the chicken breast until done, then shred it into bite-sized pieces. I used the Tandoori BBQ flavor chicken breast from I’m Dak, but feel free to use any pre-cooked chicken breast you have! This adds texture and protein.
Step 2
In a bowl, whisk together 3 eggs and 1/2 cup (about 100ml using a standard paper cup) of plain soy milk. This mixture will create a wonderfully creamy texture for your curry.
Step 3
Heat a wide pan over medium-low heat. Add 1 block of solid curry roux and the remaining plain soy milk (about 90ml). Stir continuously until the curry roux is completely dissolved and smooth. This forms the delicious curry base.
Step 4
Add a pinch of black pepper to the curry base to enhance its aroma. (Tip: You can also add a little paprika powder if you like, or a touch of Sriracha sauce for a bit of heat. Paprika powder is optional.)
Step 5
Add the shredded chicken breast to the curry base and mix well to ensure it’s evenly coated. The rich protein from the chicken will deepen the flavor of the curry.
Step 6
In a serving bowl, place 1 serving of cooked rice at the bottom. Pour the simmering curry and chicken mixture over the rice. Gently pour the beaten egg and soy milk mixture around the edges of the curry. Keep the heat on low and stir gently with a spatula. The egg mixture will start to cook, creating a soft, fluffy texture similar to scrambled eggs.
Step 7
Once the egg mixture has reached your desired soft, creamy consistency, turn off the heat. Carefully transfer the finished egg curry onto the rice. Sprinkle with a little parsley for garnish. Voilà! Your super simple and delicious diet egg curry is ready to enjoy! 🙂
