Simple Natto Soba Noodles
Easy 3-Step Natto Bibim Soba Noodles Recipe
This dish was created by a solo dweller who is challenging themselves to eat healthier. It’s a quick and nutritious meal perfect for one!
Sauce Ingredients
- 2 Tbsp Soy Sauce
- 1 Tbsp Vinegar
- 1 Tbsp Sugar
- 1 Tbsp Perilla Oil (Deulgireum)
- 1/2 Tbsp Wasabi
- 1/2 Tbsp Yeondu (Korean soup soy sauce) – optional
Main Ingredients
- 1 pack Natto (with included sauce and mustard)
- 1 serving Soba Noodles
- 1 pack Natto (with included sauce and mustard)
- 1 serving Soba Noodles
Cooking Instructions
Step 1
First, bring a generous pot of water to a rolling boil. Once boiling, add the soba noodles and cook according to package instructions, or until the noodles are tender and cooked through. Stir occasionally to prevent the noodles from sticking together.
Step 2
While the noodles are cooking, let’s prepare the delicious dressing. In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of vinegar for a tangy kick, 1 tablespoon of sugar for sweetness, and 1 tablespoon of savory perilla oil. Add 1/2 tablespoon of wasabi for a pleasant zest. If you have Yeondu (a Korean soup soy sauce), add 1/2 tablespoon for an extra layer of umami, though it’s perfectly fine without it. Stir all the ingredients together until the sauce is well combined.
Step 3
Once the soba noodles are cooked, drain them and rinse under cold water to cool them down and remove excess starch. Place the drained noodles in a serving bowl. Pour the prepared dressing over the noodles and mix well until evenly coated. Finally, open the natto pack, stir its included sauce and mustard (if any) together thoroughly, and then top the bibim soba noodles with the mixed natto. Enjoy your delicious Natto Bibim Soba Noodles!
