Smooth Butternut Squash Cream Soup
Nutritious & Creamy Butternut Squash Soup!
Using a butternut squash gifted by a friend, I’ve made a wonderfully smooth soup with milk. It’s packed with nutrition and gentle on the throat, making it perfect for children suffering from a sore throat or for those needing easily digestible meals.
Ingredients
- 1kg Butternut squash
- 1 Onion
- 1L Milk
- 1 tsp Salt
- 1 Tbsp Sugar
- 1 Tbsp Olive oil
Cooking Instructions
Step 1
First, trim off the top and bottom ends of the butternut squash. Microwave it for 3-5 minutes to slightly soften it, making it easier to cut. Once removed, cut it into four pieces, scoop out the seeds and stringy bits, and then peel off the skin. (Tip: Microwaving the squash before cutting makes it much easier to handle and peel.)
Step 2
Cut the prepared butternut squash into small, bite-sized pieces.
Step 3
Steam the cut butternut squash until it is very soft. You should be able to easily mash it with a fork. (Tip: Ensure the squash is thoroughly cooked and tender for a smoother soup consistency.)
Step 4
Finely dice one onion. In a pan, heat 1 tablespoon of olive oil over medium-low heat. Sauté the diced onion until it becomes translucent. This process brings out the natural sweetness of the onion and adds depth to the soup’s flavor.
Step 5
In a pot, combine the steamed butternut squash and the sautéed onions. Add about 2-3 pinches of salt and 2.5 cups (approximately 500ml) of milk.
Step 6
Using an immersion blender (like a ‘dokebi bangmang-i’), blend the ingredients directly in the pot until very smooth. Blend thoroughly to achieve a creamy texture. Taste the soup and adjust the sweetness by adding sugar, honey, or syrup according to your preference. (Alternative: If using a regular blender, transfer the mixture from the pot to the blender, blend until smooth, and then return it to the pot.)
Step 7
Bring the soup to a boil over high heat. Once it starts boiling, reduce the heat to medium-low and simmer for about 10 minutes, stirring occasionally to prevent sticking. You can adjust the soup’s consistency by adding more milk if you prefer it thinner. For a richer flavor, you can substitute the milk with heavy cream. Your delicious butternut squash soup is ready to serve!
